SLOW-COOKED BRISKET WITH CAROLINA BBQ SAUCE
South Carolina BBQ sauce has a mustard-vinegar base that adds a big zing to my slow-braised brisket.

Steps:
- Preheat the oven to 300 degrees F.
- For the brisket: Add the olive oil to a large Dutch oven over medium-high heat. Sprinkle the brisket with Miss Brown's House Seasoning. Sear the brisket fat-side down until a deep golden crust forms, 5 to 7 minutes. Flip and sear other side until deep golden brown, another 5 minutes. Remove to a sheet tray.
- Add the onions and bay leaves and season with salt and pepper. Stir until coated in fat. Add the beer and bring to a boil. Put the brisket on top of the onions, cover and place in the oven for 3 hours.
- For the BBQ sauce: While the brisket cooks, add the vinegar, brown sugar, brown mustard, whole-grain mustard, yellow mustard, onion, garlic, bourbon and cayenne to a medium saucepan over medium-high heat. Bring to a boil and cook until the onion becomes slightly translucent, about 5 minutes. Remove from the heat, add to a blender (or use an immersion blender) and puree until smooth, being careful of hot steam. Pour back into the pan and simmer over medium-low until slightly thickened and reduced by 1/4, about 30 minutes.
- At the 3-hour mark, pour 1 cup of the BBQ sauce over the brisket, return to the oven and cook until the sauce has melted into the brisket, 30 minutes more. Use a knife to test the tenderness of the brisket. It should pierce the brisket very smoothly, with no pushback.
- Remove the brisket from the pot and slice against the grain. Discard the bay leaves. Serve with sliced white bread and all those slow-braised beer onions. Don't forget about the extra BBQ sauce for dipping. Store any extra sauce in an airtight container in the refrigerator for up to 2 weeks.
- Stir together the onion powder, paprika, garlic powder, salt and pepper in a medium bowl. Keep in an airtight container. Makes 5 teaspoons.
SLOW-BAKED BRISKET WITH BOURBON MUSTARD BARBECUE SAUCE

- TO MAKE THE DRY RUB: Combine the 1/2 cup brown sugar, spice mixture, and salt in a small bowl.
- TO MAKE THE BRISKET: Preheat the oven to 275°F. Using your fingers, evenly coat the brisket with dry rub. Combine the mustards, 1/4 cup bourbon, and cider in a small bowl. Spread the mustard paste evenly over the brisket. Set the brisket in a large roasting pan, fat side up. Tightly cover the pan with aluminum foil and bake until the meat is tender, at least 6 hours.
- TO MAKE THE BARBECUE SAUCE: In a large skillet, heat the olive oil over medium heat and cook the onion until wilted, about 3 minutes; stir in the garlic and cook 1 minute more. Stir in the 1/4 cup mustard, the 1/2 cup brown sugar, beef stock, the 1/2 cup bourbon, ketchup, tomato paste, Worcestershire sauce, lemon juice, and soy sauce and bring the mixture to a boil. Decrease the heat to medium-low and simmer until the sauce is slightly thickened, about 15 minutes.
- To serve, slice the brisket thinly across the grain and serve hot or at room temperature with barbecue sauce.
- Spice Mix
- In a small bowl, combine the chili powder, cumin, black pepper, onion powder, garlic powder, dry mustard, coriander, paprika, cayenne, and thyme leaves. Measure out 1/4 cup and reserve the rest in an airtight container for future use.

- The brisket can be baked up to 2 days in advance, covered, and refrigerated until ready to serve. Reheat in a 275°F oven for 1 hour. The spice mixture will keep in an airtight container at room temperature for about 2 months.

- Leftovers make great hot sandwiches. In a medium saucepan, heat thin slices of brisket over low heat with enough barbecue sauce to coat them generously. Serve on soft rolls, such as Honey Grain Rolls, page 104.
- Creole mustard, a Louisiana favorite, is made with crushed mustard seeds and often a touch of horseradish. If you can't find it, substitute any whole grain Dijon-style mustard
BUSY DAY BARBEQUE BRISKET
Brisket is rubbed with spices and liquid smoke and then cooked in a slow cooker with barbeque sauce until tender and juicy. This calls for just enough barbecue sauce for that smoky flavor while still allowing the flavor of the meat to come through. Hint: It's even better if you marinate it in the dry rub overnight.

- Combine thyme, paprika, pepper, salt, onion powder, garlic powder, cayenne, and cumin in a small bowl; set aside. Rub brisket all over with liquid smoke, then rub with spice mixture.
- Pour Worcestershire and barbeque sauces into a slow cooker; place beef on top. Cover, and cook on LOW 8 to 10 hours, until fork tender.

Steps:
- Place onions in a 5 quart slow cooker.
- Season brisket with garlic salt and lemon pepper and place on top of onions, cutting to fit if necessary.
- In a small bowl, stir together the remaining ingredients and pour in slow cooker over brisket.
- Cover and cook on LOW setting for 12-14 hours.
- Strain and defat cooking liquid.
- Serve as a sauce on the side.
BRISKET WITH BBQ SAUCE
After growing up in West Texas for 30 years where barbecue is the best, I found this recipe which is so tender and absolutely delicious. Leftovers, if you have any, make really great sandwiches. You can increase the liquid smoke to 4 tablespoons for really smoky flavor.

- Pour liquid smoke over brisket. Rub with onion salt and garlic salt. Roll brisket in foil and refrigerate overnight.
- Preheat oven to 300 degrees F (150 degrees C). Place brisket in a large roasting pan. Cover and bake for 5 to 6 hours. Remove from oven, cool, and then slice. Put slices back into pan.
- In a medium saucepan, combine brown sugar, ketchup, butter, water, celery salt, liquid smoke, Worcestershire sauce, mustard, salt and pepper. Stir, and cook until boiling.
- Pour sauce over meat slices in pan. Cover and bake for 1 more hour.
