Steps:

  • For the brine: In a large saucepan, combine the water, vanilla beans and seeds, cinnamon sticks, cloves, and black peppercorns. Bring to a boil over medium heat. Add the sugar and salt; stir to dissolve. Turn off the heat, and then cool to room temperature (this can take an hour or so; put it in the fridge to hasten the process. Alternatively, you can boil only 4 cups of water and then add 5 cups of ice cubes).
  • When cool, pour the brining solution into a container large enough for the pork and the solution, such as a disposable aluminum roasting pan. Cover and refrigerate overnight or up to 24 hours.
  • Preheat the oven to 325 degrees F.
  • Pull the pork out of the brine and pat dry with paper towels. Warm the oil in a large, ovenproof skillet over medium-high heat until nearly smoking. Add the pork to the pan and brown on all sides, about 15 minutes. Remove to a plate.
  • Add 2 tablespoons butter to the pan and reduce the heat to medium. Add the apples and celeriac. Season with salt and saute until golden brown. Deglaze with vinegar and 1 cup cider, scraping up any brown bits. Stir in the brown sugar.
  • Nestle the pork loin in the apples and celeriac and pour enough cider into the pan to keep things from burning on the bottom of the pan, about 1 cup. Transfer the pan to the oven. Roast until a meat thermometer inserted in the center of the loin reads 145 degrees F, about 45 minutes. Transfer the pork to a cutting board and let rest 10 minutes before carving (pork will continue to cook as it rests).
  • Meanwhile, return the pan to the stove over medium heat. Finish the sauce by adding in more cider if the pan is too dry. Stir in the remaining butter and the vanilla and black pepper. Taste for seasoning and readjust, if necessary.
  • Slice the pork into 1/2-inch thick slices. Arrange on the platter with the apples and celeriac. Drizzle the sauce over the meat.

9 cups water
2 vanilla beans, split and seeds scraped out
2 (2-inch) cinnamon sticks
5 whole cloves
1/4 cup black peppercorns
1/2 cup granulated sugar
1/2 cup kosher salt
1 (2 1/2 to 3-pound) boneless pork loin
2 tablespoons canola oil
1/4 cup butter, divided
3 medium Granny Smith apples, cored and sliced into 1/2-inch wedges
1 celeriac (celery root), skin and roots sliced off, sliced into 1/2-inch slices
Kosher salt
1/4 cup apple cider vinegar
2 cups apple cider, divided
1 tablespoon light brown sugar
1 teaspoon vanilla extract
1/4 to 1/2 teaspoon freshly ground black pepper

Steps:

  • Melt 2 tablespoons butter in heavy large saucepan over medium high heat. Add onion and saute until tender and golden brown, about 15 minutes. Add garlic, cumin, cinnamon and allspice and stir 1 minute. Add beer, mustard and honey and bring to boil (sauce will foam). Remove from heat. Puree in batches in blender until smooth. Cool to room temperature. Pour into baking dish. Add pork loin; turn to coat. Cover and refrigerate 8 hours or overnight, turning occasionally.
  • Preheat oven to 375 degrees F. Remove pork from marinade; pat dry. Reserve marinade. Heat oil in heavy large skillet over medium heat. Season pork with salt and pepper. Add to skillet and brown on all sides. Transfer to baking sheet with rim. Roast in oven for 3/4 to 1 hour or until thermometer inserted into thickest part registers 155 degrees F. Transfer pork to work surface; reserve any pan juices.
  • Combine pan juices and marinade in saucepan. Bring to boil. Reduce heat to simmer. Mix butter and flour in small bowl until smooth paste forms. Add to sauce and simmer until sauce thickens. Season to taste with salt and pepper. Cut pork into slices. Pour sauce over.

1 large red onion, thinly sliced
2 garlic cloves, minced
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
2 (12ounce) bottles beer (not dark)
1/2 cup Dijon mustard
1/4 cup honey
1 (3 1/2) pound boneless pork loin, tied

Steps:

  • Preheat stovetop or outdoor smoker to approximately 230 degrees F.
  • Trim the white "silver skin" from the pork loin and lightly coat the entire loin with olive oil. Sprinkle the rub liberally on all sides of the loin.
  • Place pork in the smoker and smoke until internal temperature or pork reaches 150 degrees F, about 1 1/2 to 2 hours. Remove pork from smoker and wrap lightly in aluminum foil.
  • Meanwhile, preheat broiler.
  • Place the jam in a medium bowl and stir in about 1/3 of the chipotle sauce. Mix well, adding more chipotle sauce until the heat and taste reach your personal preference.
  • Unwrap the pork and cover with the glaze. Place on a broiler pan and broil until glaze is bubbling, about 3 minutes. Slice pork against the grain and serve.

1 (4-pound) pork loin
Extra-virgin olive oil, as needed
3 tablespoons dry spice rub for pork
1 (10-ounce) jar seedless raspberry jam
1 (5-ounce) bottle chipotle hot pepper sauce (recommended: Tabasco)

Steps:

  • 1. Combine all of the ingredients for the marinade in a bowl and form a paste. Rub this paste all over the pork and place in a covered bowl in the refrigerator for at least one hour or as long as over night. The longer the pork marinades the better it will taste. Slice the pork into ¼ inch thick slices, or however you prefer. Heat a large frying pan with 2 tablespoons of olive oil and place the pork slices in the heated pan. Let the pork sauté about 3 -6 minutes, turning once. The pork will cook quickly, since it is sliced so thin, so be careful not to overcook. Plate and serve.

3 lb. center cut pork loin
marinade:
2 cloves of garlic - chopped
1 tsp. salt
1 tablespoon ground cumin
1 tsp. ground oregano
1 tsp. curry powder
1 tablespoon paprika
1 tablespoons brown sugar
zest of 1 lime
juice of 1 lime

SMOKED PORK CHOPS

There are pork chops and then there are smoked pork chops. The rub has just the right amount of sweetness and saltiness that complements the smoky flavor perfectly. Oak is my wood of choice for these but feel free to substitute any hard wood chips.

  • Preheat your smoker to 225 degrees F. I prefer to use apple when smoking pork, but any fruit woods, maple, or pecan will also taste great with these pork chops.
  • Evenly season pork chops on all sides with my sweet rub. The thicker your chops are, the more liberally you can season.
  • Place the chops on the smoker, close the lid, and cook until the internal temperature of the chops reads 145 degrees F. This process can take anywhere from 60-90 minutes, depending on how thick your pork chops are.
