SNOW PEA HOLIDAY WREATH

Steps:
- In a large saucepan, bring 6 cups water to a boil. Add snow peas; cook, uncovered, just until crisp-tender and they turn bright green, 1-2 minutes. Drain and immediately drop into ice water. Drain and pat dry. , In a small bowl, combine the cream cheese, garlic powder and seasoned salt. Place bowl in the center of a serving platter. Arrange snow peas and tomatoes around the bowl.

GLAZED SNOW PEAS

- Melt 2 tablespoons butter in a large skillet over medium-high heat. Add 8 ounces snow peas, 1 bunch chopped scallions, a pinch of sugar and 1/4 cup water. Cover and simmer 2 minutes, then uncover and boil until the water evaporates, 2 more minutes. Season with salt.
STUFFED SNOW PEAS
These hors d'oeuvres are so elegant for bridal or baby showers. I always make them ahead. You can season the cream cheese with anything you like. I sometimes make them with plain cream cheese. Steps:
- In salted, boiling water, blanch (boil rapidly in lots of water) snow peas for 30 seconds.
- Cool in cold water, drain, and set aside.
- Blend the rest of the ingredients until smooth.
- With a sharp pairing knife, split the snow peas along the curved side.
- Fill each snow pea with filling, using a small spatula or pastry bag with tip.
- I have used a ziplock bag with a hole cut in the corner.
- Can be made the day before, refrigerate, and serve chilled.
SNOW PEAS WITH ST. ANDRE
This is a very popular hors d'oeuvre in Martha's repertoire. Guests cannot believe that someone has actually stuffed a snow pea. This recipe comes from "Entertaining," by Martha Stewart.

- Remove stem end from snow peas, string them, and blanch in a large pot of rapidly boiling water for 30 seconds. Plunge them immediately into cool water to stop the cooking and preserve their beautiful green color.
- With a small sharp knife, slit open the straight seam of each snow pea and pipe softened cheese into each one, using a small-tipped pastry tube, or spread with a small spatula. Garnish each pod with a small leaf of mint just poking out the top of the snow pea.
SNOW PEAS WITH WATER CHESTNUTS
This is a simple veggie dish that goes well with almost anything. It looks nice enough for company or a holiday dinner. Fresh snow peas are the preference but frozen will work well too. 10 mins prep time is for frozen peas, fresh will take a bit longer.

- Wash fresh snow peas if using; trim the ends and string.
- Defrost snow peas and dry on paper towels.
- Melt butter in a wok or lg skillet and add the peas, water chestnuts, garlic, salt, pepper and lemon juice.
- Cook over high heat, stirring, until veggies are tender crisp. Serve immediately.

- Place all ingredients in a sauce pan over medium heat. Stir until cream cheese is melted and heated through.

SNOW PEAS WITH CREAM CHEESE

- 1. Blanch the snow peas in boiling water for 1 minute. Immediately dash them into cold water with a few ice cubes. Slit open the inside if each pea. Set aside. 2. Puree the remaining ingredients in a food processor until very smooth. Spoon the radish cream into each of the snow peas (if you have an icing tube or pastry tube they will work well and give an even finish). 3. Arrange the filled peas on a platter already covered in red lettuce or radicchio leaves. Arrange them in a pattern (Fan, Spray, side by side or whatever).

For the perfect appetizer for baby showers, garnish each one of these cream-stuffed goodies with a bit of cream cheese and one, two or even more individual peas, depending on how many she's expectin'! Or if you prefer, garnish with cooked baby shrimp.

- Remove string from pods and trim off the blossom end. Make a small slit on flat side of pod. Soak pods in ice water for about 1 1/2 hours. Drain and dry pods.
- Put cream cheese in a pastry bag and pipe enough cheese into pods until full. Arrange pods on a platter lined with spinach or lettuce. Garnish each pod with a bit of cream cheese studded with the appropriate number of peas, depending on how many the mother-to-be is expecting.
