Steps:
- Preheat oven to 325 degrees. In a medium saucepan, over medium-high heat, combine the apple juice, sugar, raisins, walnuts, and cornstarch. Bring the mixture to a boil, then reduce the heat to low and cook for 5 minutes or until the mixture thickens.
- Meanwhile, cut each cinnamon roll into 6 pieces. Place half of the pieces on the bottom of a 13x9-inch glass baking pan that has been coated with nonstick baking spray. Cover with the raisin-nut mixture, then top with the remaining dough pieces. Bake for 30-40 minutes, or until the dough is firm and golden. (For a sweeter touch, spread the icing from the cinnamon roll packages over the top just after removing the cake from the oven.) Cool, then cut into serving-size pieces.
ALMOND RAISIN CAKE WITH SHERRY
Forget the tea and cake here and serve this with a glass of sherry. For the best result make this the day before so the flavours can infuse

Steps:
- Tip the raisins into a bowl, pour over the sherry, then leave for at least 30 mins to soften. Meanwhile, heat oven to 180C/ fan 160C/gas 4. Lightly grease a deep 20cm round cake tin, then line the bottom with a circle of greaseproof paper.
- Mix together the yogurt, oil and eggs. Put the remaining dry ingredients into a large bowl, pour in the yogurt mixture, then stir together until smooth. Scoop half the raisins out of the sherry, then stir into the batter. Spoon into the prepared tin and smooth the surface with a spoon. Cook in the oven for 50-55 mins until the top springs back when pressed lightly and a skewer inserted into the middle of the cake comes out clean.
- Take a skewer and prick all over the cake. Pour over 5 tbsp of the soaking sherry and let it soak in. You can make up to this point 3 days in advance and store in an airtight container. Serve warm or leave to cool, then dust with icing sugar. Warm the rest of the soaked raisins and sherry, then serve alongside the cake with some vanilla ice cream.

ORANGE NUT RAISIN CAKE
I adore cakes with orange flavours and this cake is so moist and flavorful. You would be amazed how good it tastes. I found this recipe on net--I don't remember where I got this from, but I guess it's from allrecipes.com.

Steps:
- Sieve flour salt and baking powder together.
- In a separate bowl, mix chopped nuts and raisins. Coat them together with a tsp of flour to avoid them sinking to the bottom of the cake pan.
- In a large bowl, cream butter and sugar. Add eggs one at a time; beat for 1-2 minutes on a slow speed mixer.
- Stir in vanilla.
- Add the flour mixture to the butter mixture alternating with the orange juice.
- Mix well.
- Add nuts and raisins; mix with a wooden spoon.
- Pour in greased dish and bake at 175°c for about 60 minutes.
- Let cool well before serving
- (My cake usually cooks even before one hour and at times takes longer to brown, however keep checking and don't overcook or else it would loose its moistness).

This recipe is an old-time favorite that was given to me by my mother-in-law. She told me the cake shouldn't be eaten the day it's baked...aging makes it so much better. She once entered this cake in a contest and won first prize!
