Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Brush both sides of each cabbage wedge with olive oil. Sprinkle garlic powder, red pepper flakes, salt, and pepper over each wedge. Arrange wedges on a baking sheet.
  • Roast in the preheated oven for 15 minutes; flip cabbage and continue roasting until browned and charred in some areas, about 15 minutes more. Squeeze lemon over each wedge.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir cabbage, chicken broth, onion, butter, bacon, seasoned salt, salt, and black pepper together in a 9x13-inch baking dish. Cover the dish with aluminum foil.

Steps:

  • Preheat over to 375 degrees.
  • Grease a 2-quart casserole.
  • Cook cabbage in boiling, salted water for 10 minutes.
  • Drain and let cool; chop finely.
  • In mixing bowl, blend eggs, 3 Tablespoons butter, cream, salt and pepper; stir in cabbage.
  • Turn into casserole dish.
  • Blend remaining butter with bread crumbs and sprinkle over cabbage.
  • Bake 30 minutes.

Southern Fried Cabbage With Sausage image

Steps:

  • Chop/slice the sausage, cabbage, and onion.
  • In a large non-stick skillet, pre-cook the sliced sausage about 3 minutes to render some of the fat out. Remove sausage from skillet and drain on paper towels if needed. Set aside. Wipe the skillet clean.
  • In the same skillet, melt the butter. Add cabbage and onion and cook and stir on medium-high for about 5 minutes, until cabbage starts to wilt.
  • Add remaining ingredients, and the sausage.
  • Cover the skillet and cook for about 10 minutes.
  • Uncover, and finish cooking until cabbage is desired tenderness and most of liquid has been reduced.

3 tablespoons butter or 3 tablespoons bacon fat
1 small green cabbage, chopped
1/2 cup onion, chopped
1/2-3/4 lb smoked sausage, sliced (I like Conecuh, Original)
1 (15 ounce) can diced tomatoes, undrained (I like Hunt's Petite Diced)
1/4 teaspoon garlic salt, to taste
1/4 teaspoon Tony Chachere's Seasoning, to taste (optional)

  • melt butter over medium heat on the stove top in a frying pan. Cut the bacon into small pieces and fry in the butter. While bacon is frying, give the onion a rough chop and add to the frying pan. Mince the garlic. Just as the onion is becoming translucent (2-3 minutes), add the garlic and cook until fragrant (smells up the kitchen).
  • Add all of the ingredients (including the melted butter and bacon grease) to a large sauce pot (6 quart or so). Cut up the cabbage as follows: Cut into quarters and then cut into strips that are about 1-2 inches wide (after removing the hard center core) and place into the large sauce pot. Cover the the cabbage with chicken stock - but if not enough stock, add water to cover. Peel three fist sized potatoes and cut into 1-2 inch squares. Add to the stock pot. Add the salt, Tony chachere's (seaon-all) and pepper. Add the apple cider vinegar and baking soda as well.
  • Cook over medium high heat on the stove top by simmering for 10-12 minutes or just until the cabbage is done (try it to know for sure). You may need to add more salt and/or pepper depending on taste.

  • Melt 2 tablespoons of the butter in a medium saucepan over medium; whisk in flour, and cook, whisking constantly, until smooth and thick, about 1 minute. Gradually add milk to saucepan, whisking constantly to remove any clumps. Cook, whisking constantly, until thickened and smooth, about 3 minutes. Remove from heat, and whisk in Worcestershire, salt, pepper, and 1/2 cup of the Parmesan until smooth. Pour sauce over cabbage mixture.
  • Place remaining 1 tablespoon butter in microwavable bowl, and microwave on HIGH until melted, about 30 seconds. Add breadcrumbs and remaining 1/2 cup Parmesan to melted butter, and stir until combined. Sprinkle breadcrumb mixture evenly over cabbage.
  • Bake in preheated oven until casserole is bubbly and breadcrumbs are golden, 20 to 25 minutes.
