BACON CORNBREAD FRITTERS WITH SPICY BUTTERMILK DIP
Steps:
- For the Fritters: Heat a large pot or deep-fryer with the canola oil to 350 degrees F.
- In a large bowl, combine the baking mix, cornmeal, and sugar. Beat in the eggs and milk until well incorporated. Mix in the corn, thyme, paprika, bacon, melted butter, and salt and pepper.
- Carefully drop the fritter batter in hot oil, 1 heaping tablespoon at a time. Fry in batches of 8 to 10 making sure not to overcrowd the pot. Fry until brown and crispy, about 3 to 4 minutes. Remove the fritters to a paper towel lined plate to drain. Transfer to a serving platter and serve with a side of Spicy Buttermilk Dip.
- For the Dip: Add all of the dip ingredients to a serving bowl and mix together until well blended.
SPICY BUTTERMILK DIP
Recipe from July 2009 issue of Food & Wine from Chef Kelly English. Chef English serves it with his mini version of Natchitoches. The dip sounded delicious, so I have posted it here for safe keeping.

- In a shallow baking dish, whisk together the buttermilk and red pepper sauce. Add chicken pieces and turn to coat. Cover and refrigerate for a minimum of 2 hours and up to 24.
- In a shallow baking dish, whisk together the flour, oregano, garlic powder, paprika, cayenne pepper, salt, and freshly ground black pepper. Toss the chicken pieces in the seasoned flour, a few at a time, until well-coated. Dip chicken in the buttermilk mixture, then coat again in the flour mixture.
- In a large heavy skillet, pour oil to a depth of 1 inch. Heat the oil to 350°F (Use a deep-fry thermometer to measure the temperature.).
- Carefully add chicken pieces in a single layer, skin side down. Fry about 4 minutes, turn over, and fry the other side for about 4 minutes. Turn again, frying for a total of about 15 minutes, or until chicken is evenly golden brown, crisp, and cooked through. (170F breast meat; 180F dark meat).
- Carefully remove cooked chicken from pan. Place on a paper towel-lined plate to drain. Serve warm or at room temperature.

Steps:
- Cut onions into 1/2-inch slices, separate into rings, and set aside.
- Whisk together all ingredients other than oil.
- Pour oil to a depth of 1/2 inch into a fry pan and heat to 350.
- Dip onion rings in batter, coating well.
- Fry, a few rings at a time, until golden brown.
- Drain on paper towels.
- Serve immediately.
- Or can be kept hot in the oven.

SPICY RANCH DIP
Simple, quick and easy to make. Good for any party. I would have suggested this for Super Bowl (even though I'm not a football fan). The Buttermilk ranch dressing mix is very important, although you can use any kind of dry ranch mix.

SPICY BUTTERMILK COFFEE CAKE
Got this off of one of the wally world recipe cards that they have out during the holidays.. Credit was given to a Georgia C. Harris. This recipe is actually fairly mild in flavor - the spices lend a pleasant hint of fall ( and make me hanker for some eggnog ), but it isn't "spicy" so far as heat content. My preferance is fresh ground nutmeg, but all I had was pre-ground, and it turned out fine. I plan to try some vanilla extract next time - I'll update accordingly.

- Preheat oven to 350 degrees F, and coat 10 inch bundt pan w/non stick spray ( I like baking Pam with flour ).
- In lrg bowl stir together flour, brown sugar & salt. Cut in shortening ( a fork will work, but pastry cutters are best ) until the mix looks like fairly coarse crumbs. Set aside 1/2 cup of crumb mix. Then stir the baking soda,cinnamon, & nutmeg into the "crumb" mix.
- In a smaller bowl gently mix the eggs and buttermilk together. Slowly add to crumb/spice mix, until just combined ( no dry spots, but will look lumpy due to the shortening bits ).
- Sprinkle reserved crumb mix and nuts into the bundt pan. Carefully pour batter over, and gently tap the sides of the pan to get a level surface.
- Bake for 50-55 minutes, or until a toothpick or cake tester comes out clean. Cool in pan for 10-15 mins ( on a wire rack if possible ), then remove from pan. Can be served warm or cool.
