- In a large bowl, combine the mayonnaise, sour cream, scallions, jalapeño peppers, garlic, lime zest, lime juice, cilantro, chipotle and crab meat.
- Serve on bread for sandwiches, or make into a hot dip: Heat oven to 350 degrees. Stir 1/2 cup of the cheese into crab salad. Transfer mixture to a casserole or gratin dish and sprinkle with the remaining 3 tablespoons of cheese. Bake until the top is golden brown, about 30 minutes. Serve with crackers.

- Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 1 quart baking dish.
- In a medium bowl, mix cream cheese, sour cream, mayonnaise, lemon juice, Worcestershire sauce, dry mustard, garlic powder and about 2 tablespoons of the Cheddar cheese. Fold in crabmeat, hot sauce and 2 tablespoons seafood seasoning.
- Transfer the mixture to the prepared baking dish. Top with remaining Cheddar cheese and seafood seasoning. Bake in the preheated oven 30 minutes, or until bubbly and lightly browned.

SPICY CRAB DIP
This style of crab dip, often referred to as Maryland crab dip because of its Chesapeake Bay origins, makes for a festive appetizer. Here, it's served hot out of the oven and is extra creamy thanks to the combination of cream cheese and a little mayonnaise. Though crabs are plentiful this time of year - and you can certainly make this with freshly steamed and picked meat if you'd like - canned lump crabmeat makes this dish simple to assemble. Just be careful to leave the clumps of meat as intact as possible when mixing. A sprinkle of cayenne pepper and a generous douse of hot sauce add heat to this flavorful dish.

- Heat oven to 375 degrees. Grease an 8-inch cast iron skillet or 1-quart baking dish with butter.
- In a large bowl, combine the cream cheese, mayonnaise, shallot, chives, garlic, lemon juice, Cajun seasoning, mustard powder, Worcestershire sauce and 1/3 cup Parmesan. Stir until well combined. Add the crabmeat and gently stir until just combined, trying to not break up the large lumps. Season with pepper to taste.
- Scrape into the prepared skillet and smooth the top. Sprinkle the ground butter crackers and remaining 2 tablespoons Parmesan on top.
- Bake until golden brown and bubbling, 20 to 25 minutes. Cool for 10 minutes, then sprinkle with ground cayenne, hot sauce and chives. Serve with baguette, celery sticks, carrots, additional crackers and more hot sauce.
CHILI CRAB DIP WITH SHRIMP CHIPS
Inspired by chili crab, an aromatic and spicy Singaporean seafood braise, this crab dip gets sweetness from tomato paste and flavor from shallots and ginger.

- Pulse or blend shallots, lemongrass, ginger, chile, garlic, tomato paste, sugar, 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt, and ½ cup water in a food processor or blender until a coarse purée forms.
- Heat oil in a medium skillet over medium-high. Scrape purée into pan and cook, stirring often, until mixture darkens and thickens to the consistency of tomato paste, 12-15 minutes. If it begins to stick and brown, stir in a little water (about 1 Tbsp.), scraping up any browned bits with a wooden spoon. (You should have about ⅔ cup.)
- Transfer mixture to a small bowl and vigorously mix in cream cheese and mayonnaise. Stir in crabmeat, half of the scallions, and half of the cilantro. Taste dip and season with more salt if needed.
- Transfer dip to a serving bowl. Top with remaining scallions and cilantro, then with fried shallots (if using). Serve with shrimp chips.

- Use a pizza cutter to cut each tortilla into 8 wedges. Preheat oven to 350°F. Spray a pie plate with cooking spray. Arrange tortilla pieces in a single layer on a large baking sheet and set aside for now.
- In a medium bowl, combine the crab, cheese, jicama, green onions, bell pepper, cilantro and celery in a medium bowl. Add the mayo mixture, stirring until well combined. Spoon into the prepared pie plate.
- On the upper rack, place the pie plate and on a lower rack place the baking sheet with the tortilla chips. Bake for 10 to 15 minutes, or until thoroughly heated. Pull out the chips when they're nice and crispy (about 10 minutes). The dip may need a little bit longer time to get fully heated. Sprinkle avocado on top of the heated dip and serve with the baked chips for dipping.
