- Preheat oven to 375°. In a large skillet, cook sausage over medium heat until no longer pink; drain. Spoon into a greased 13x9-in. baking dish. Layer with spinach, bacon, onion, red pepper and cheeses., In a large bowl, whisk eggs, milk and seasonings; pour over top. Bake 30-35 minutes or until a knife inserted in the center comes out clean. Let stand 5 minutes before cutting.

I especially like to make this breakfast dish when we have weekend guests. I fix it the night before, and the next morning I can sit, eat and enjoy their company. People often think I spent hours preparing it.

- Line a greased 13x9-in. baking dish with bread cubes; set aside. , In a skillet, cook sausage with the onion and green pepper over medium heat until meat is no longer pink; drain. - Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.

This strata is really easy to make. Put it together the day before, then just remove from the refrigerator and bake. Ham or bacon can be substituted for the sausage. Sometimes I add cooked chopped broccoli for a change of pace.

- Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, and set aside.
- Layer bread cubes, sausage, and Cheddar cheese in a lightly greased 7x11 inch baking dish. In a bowl, beat together the eggs, milk, salt, and mustard. Pour the egg mixture over the bread cube mixture. Cover, and refrigerate at least 8 hours or overnight.

Steps:
- Spray 9x13x2 baking dish with cooking spray.
- Trim crusts off bread, butter one side and place buttered side down in baking dish.
- In skillet, brown sausage until just about cooked through.
- Add green onions and garlic cloves and cook just until soft.
- Make sure sausage is crumbly and not in big chunks. Drain off any excess grease.
- Mix together squeezed spinach and stuffing mix. Add to Sausage mixture in skillet.
- Pour 1/2 C Skim Milk over the bread slices to moisten.
- Sprinkle Shredded Monterey Jack Cheese over bread slices.
- Top Cheese with Sausage, Spinach, Stuffing Mixture, evenly distributing.
- Mix together eggs and 1 pint 1/2 & 1/2 with paprika, salt and pepper.
- Pour egg mixture over Sausage mixture in baking dish.
- Bake at 375 degrees (F) for 35 min until just about set.
- Remove from oven and top with Shredded Parmesan Cheese. Bake for an additional 5-10 minutes until cheese is melted and lightly browned.
- This can be made the night before and put in refrigerator, cover with plastic wrap overnight. Remove plastic and bake. I like to garnish with a tomato rose or radish mouse. When serving, I cut 3 rows of 5 when main course, 4 rows of 5 if part of a plentiful buffet.

CARAMELIZED ONION, SPINACH AND GRUYERE STRATA WITH SAUTEED CHERRY TOMATOES

- Preheat the oven to 325 degrees F. Put the bread on a baking sheet and toast until lightly golden brown on both sides, about 10 minutes. Remove and let cool.
- Meanwhile, heat the butter and canola oil in a large saute pan over medium heat until shimmering. Add the onions and toss to coat, then add the sugar and season with salt and pepper. Cook, stirring occasionally, until the onions are golden brown and caramelized, about 20 minutes. Remove from the heat and let cool slightly.
- In a large bowl, combine the toasted bread, caramelized onions and spinach. In another large bowl, whisk the eggs, milk, heavy cream, 1 1/2 cups cheese, the mustard, 1 teaspoon salt, 1/2 teaspoon pepper, the thyme and nutmeg. Butter a 9-by-13-inch baking dish. Add the bread mixture to the baking dish, then pour the egg mixture over the bread and press down to make sure it is totally submerged.
- Increase the oven temperature to 350 degrees F. Bake the strata, uncovered, until it is golden brown on top, puffed slightly and doesn't shimmy with uncooked custard when you shake the pan, 50 minutes to 1 hour; sprinkle with the remaining 1/2 cup cheese during the last 10 minutes of baking. Let cool 5 minutes before serving.
- Meanwhile, prepare the tomatoes: Heat the canola oil in a large saute pan over high heat until it begins to shimmer. Add the cherry tomatoes, season with salt and pepper and cook until softened, 4 to 5 minutes. Add the chives and remove from the heat. Serve the strata with the sauteed tomatoes.
MAKE-AHEAD CHEESY SPINACH AND EGG STRATA
If you are a spinach lover, then you will have to try this recipe! I have made this many times to serve at a brunch get together (I always make two of these to serve at a brunch!) Plan ahead this dish needs to chill for a minimum of 8 hours or up to 24 hours or until the custard is absorbed in the bread. You can really use any cheese that you wish I find that either asiago or Gruyere are the best! If you don't want a strong spinach taste then use only one box of frozen spinach. To save time make the spinach/mushroom filling up to 1 day in advance and refrigerate, just warm slightly in the microwave before layering in the strata. You will LOVE this!

- Squeeze out as much of the moisture as possible from the spinach, then chop finely.
- Heat butter in a large skillet over medium heat.
- Add in the fresh mushrooms and saute for about 10-12 minutes, or until they loose their moisture completely; remove to a bowl.
- Add in onion with nutmeg, salt and cayenne and saute for 5 minutes (adding in the garlic the last few minutes) then stir in the chopped spinach; saute for 2 minutes.
- Transfer the mixture to the bowl with the mushrooms; mix to combine slightly.
- Butter a 4-quart casserole dish.
- Spread 1/3 of the cubed bread into the prepared baking dish.
- Top with 1/3 of the spinach/mushroom mixture.
- Sprinkle with 1/3 of BOTH cheeses.
- Repeat layering twice (ending with the cheeses).
- In a bowl whisk together half and half, milk, eggs, mustard.
- Pour the milk mixture evenly over the strata in the baking dish.
- Cover with plastic and chill for about 8 hours or up to 24 hours or until the bread is absorbed in the milk.
- When ready to bake, let the dish stay out at room temperature for about 40 minutes before baking.
- Set oven to 350°F (second-lowest oven rack).
- Bake uncovered for about 45 minutes, or until puffed and golden brown.

I normally hate spinach and absolutely loved this recipe! It's great for a brunch or a special breakfast. Just make it up the night before, stick in the fridge, and you can just pop it in the oven the next morning. It's easy to adjust to recipe and make substitutions if you want to, as well. Note that the prep time includes time that it chills in the fridge.

- Heat the oil in a heavy large skillet over medium heat. Add the sausage and saute, until crisp and golden, about 5 minutes. Using a slotted spoon, transfer the sausages to a plate. Add the onion to the pan drippings in the same skillet and saute, until translucent, about 4 minutes. Add the spinach and garlic. Saute, over medium-low heat until the garlic is tender, about 2 minutes. Stir in 1/2 teaspoon of salt, 1/4 teaspoon of pepper, nutmeg, and the cooked sausages.
- Place half of the bread cubes in a buttered 3-quart baking dish. Sprinkle half of the cheese over the bread, then top with half of the spinach mixtures. Repeat layering.
- Whisk the milk, eggs, remaining 1/2 teaspoon of salt and 1/4 teaspoon of pepper in a large bowl and pour evenly over the strata. Chill the strata, covered with plastic wrap, at least 2 hours and up to 12 hours.
- Preheat the oven to 400 degrees F.
- Bake strata uncovered until puffed, golden brown, and cooked through, about 25 minutes. Let stand 5 minutes before serving. Serve hot.
