SPROUTING BEAN BURGERS

Serve these veggie burgers with mustard, lettuce, tomatoes and sprouts, and they could pass for the real thing

Sprouting Bean Burgers image

Steps:

  • Place the chick-peas, wheat berries, carrots, potatoes, onions, salt substitute, basil, thyme, pepper and rosemary in a food processor.
  • Puree.
  • Add the soy sauce or tamari to taste Transfer to a large bowl.
  • Stir in enough bread crumbs to make a mixture that holds together.
  • Form into 6 patties.
  • Fry in the oil on a non stick griddle over medium heat.

1 cup chickpea sprouts
1 cup wheat berry sprouts
1/2 cup carrot, grated
1/2 cup cooked cubed potato, mashed
1/4 cup onion, grated
1/2 teaspoon salt substitute
1/4 teaspoon dried basil
1/4 teaspoon dried thyme
1/4 teaspoon ground black pepper
1/8 teaspoon ground rosemary
soy sauce or tamari
1 -2 cup whole wheat bread crumbs
1 teaspoon canola oil

  • Toss the shaved sprouts, onion and apple in a large bowl and season with salt and pepper. Mix the Dijon, vinegar, mayo and syrup in a bowl to combine. Pour over the sprout mix and toss to combine. Cover and refrigerate until ready to use.
  • Preheat the grill for medium-high heat when ready to use (use charcoal for that perfect burger flavor). Clean and oil your grate. Grill the bison burgers to 135-140 degrees F. Cover with cheese and let melt. Allow the burgers to rest while toasting the buns.
  • Smear a dollop of mayo on each toasted bun and top with lettuce, onion and tomato. Place the burgers on top and place 2 slices of bacon on top. Pile on the slaw, finish it off with a spoon full of BBQ sauce and the bun topper.
