A healthy Cantonese dish suitable for both young and old. It is easy to digest. Both tofu and pork are rich in protein that they are very nutritious. You can cook other Chinese dishes and serve with rice. Try it!

Steps:
- Marinate the pork with the seasonings for 30 minutes or more.
- Mix all the ingredients thoroughly and place them flat on a plate.
- Steam the mixture until they are cooked.
- It is a good idea to steam it over rice cooker, using a suitable rack to hold in position, when you are cooking the rice.
- Serve hot.
- If you want it more salty, add some soy sauce on top to suit your taste.

Steps:
- For the beancurds ---------------.
- Mixed minced pork, some corrianders, mushrooms and cooking wine, salt, pepper, corn flour together.
- Fill the hole on each beancurd with the mixture.
- Put the beancurds into the steamer to steam for 15 minutes.
- For the gravy --------------------.
- Boil 1/2 cup of water in a small saucepan.
- Add oyster sauce, corn flour, pepper and salt to the boiling water and stir well.
- Turn off the gas and add 1 tbsp of cooking wine or sherry and the remaining corriander to the gravy and stir well.
- Sprinkle the gravy over the steamed beancurds and serve.

- In a medium bowl, combine the fermented tofu, sugar, light soy sauce, oyster sauce, Shaoxing wine, five spice powder, white pepper, dark soy sauce, and the star anise pods (just break the smaller pods off the main star anise, or pick some out that have already broken). Set aside.
- Bring about 6 cups of water to a boil to blanch the pork belly (be sure to save this blanching water, as you will use it again later). Add 1 teaspoon sugar and 2 teaspoons salt. Place the pork belly into the boiling water skin side down. Bring back up to a boil, and simmer for 30 minutes.
- Grab a deep pot or wok that will accommodate the pork belly. Add frying oil, and heat to 325°F/163°C. In batches, fry the taro slices until a golden crust forms, about 90 seconds (45 seconds per side). Set aside to cool.
- Meanwhile, cook the marinade. Heat a wok or saucepan over medium heat. Add 2 teaspoons of vegetable oil, along with the ginger. Let the ginger brown lightly for about 15 seconds. Next, add the garlic and shallots, and cook until translucent, about 1 minute. Add the sauce mixture you prepared earlier, along with ½ cup of the reserved pork blanching water. Simmer for 1 minute, remove from the heat, and cool.

- Prepare your silken tofu by cutting it in half lengthwise and then slicing it crosswise into ½-inch slices. Use your knife or cleaver to transfer each half of the cut tofu to a large heatproof rimmed plate or shallow bowl. The dish should be deep enough to hold the steaming liquid and sauce.
- Lay the tofu on the plate so the pieces are fanned out evenly, with as much tofu surface area exposed as possible. Sprinkle the salt evenly over the tofu.
- Next, steam the tofu. Add 4 cups of cold water to a wok, place the tofu on a steaming rack inside, and cover the wok.
- Turn on the heat to medium-high. The water should boil in about 7 minutes. After it has begun boiling, continue to steam for another 3 minutes––a total of 10 minutes.
