STILTON-STUFFED DATES
Steps:
- Preheat oven to 375 degrees F.
- Make a lengthwise cut in each date and gently remove the pit, forming a pocket. Fill each date with 1/2 teaspoon cheese. Cut each piece of bacon in half by width. Take a strip of bacon and wrap it around each date, forming a slight overlap on the bottom (cut side up), and place on a rack within a sheet pan. Bake until bacon is crisp and cheese melts, about 25 minutes. Remove from oven and place on a paper towel-lined plate. Allow to cool slightly and serve.

- Halve eggs lengthwise, remove yolks and mash with the cheese, cream, salt and pepper.
- Pile mixture back into egg halves.
- Sprinkle with paprika.
- Serve on a tossed salad of cold cooked green beans, tomatoes, raw sliced mushrooms, lettuce and salad dressing of your choice (if using).

- In a small heavy saucepan combine the water, the butter, and a pinch of salt and bring the mixture to a boil over high heat. Reduce the heat to moderate, add the flour all at once, and with a wooden spoon beat the mixture until it pulls away from the sides of the pan and forms a ball. Remove the pan from the heat, add the eggs, 1 at a time, beating well after each addition, and stir in the Stilton, the bacon, the scallion, and salt and pepper to taste. Drop rounded teaspoons of the batter 2 inches apart onto lightly buttered baking sheets and bake the puffs in the middle of a preheated 425°F. oven for 15 to 20 minutes, or until they are crisp and golden.
