STRAWBERRIES AND CHAMPAGNE JAM
A beautiful strawberry jam with a hint of champagne that makes a tasty gourmet gift!

Steps:
- Combine strawberries, champagne, lemon juice, and pectin in a nonreactive pan; bring to boil. Stir sugar into strawberry mixture; cook, stirring constantly, until mixture returns to a boil. Cook until sugar dissolves, 1 to 2 minutes.
- Sterilize the jars and lids in boiling water for at least 5 minutes. Ladle jam into hot, sterilized jars, filling to within 1/4 inch of the top. Run a knife or thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 15 minutes.
- Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

- Wash strawberries and drain. Remove stems and cut in half. Place in bowl with other ingredients. Place in refrigerator and chill for at least an hour. Serve in balloon or goblet glasses.

- In a small saucepan, combine the sugar with 1/2 cup water and simmer the mixture for 5 minutes, or until the sugar is dissolved. Let the sugar syrup cool completely. In a food processor, purée the strawberries with their syrup and the lime juice, transfer the mixture to a large punch bowl, forcing it through a fine sieve if desired, and stir in the sugar syrup, the brandy, and the club soda. Chill the mixture, covered, until it is cold. Add the champagne slowly just before serving and serve the punch in punch glasses, each garnished with a strawberry slice and a lime slice.

- Stir 3/4 cup sugar and 3/4 cup water in heavy small saucepan over medium heat until sugar dissolves. Bring to simmer. Remove from heat; cool syrup completely.
- Purée 3 cups strawberries in blender just until smooth. Strain puree through fine strainer.
- Transfer sugar syrup and 1 1/2 cups strawberry purée to large bowl (reserve any remaining strawberry purée for another use). Stir in corn syrup, lemon juice and vanilla. Refrigerate mixture until cold, about 2 hours.
- Stir Champagne into strawberry mixture. Process in ice cream maker according to manufacturer's instructions. Transfer strawberry ice to container; freeze until firm, at least 4 hours. (Can be made 1 day ahead. Keep strawberry ice frozen. Cover and chill remaining strawberries.)
- Toss remaining 2 1/4 cups strawberries with 2 tablespoons sugar in large bowl. Let stand until juices form, about 1 hour. Divide strawberries among 6 dessert cups. Top each serving with 1 scoop strawberry ice. Garnish with mint.

- Clean and hull strawberries. Sprinkle with sugar and cognac. Cover and chill several hours.
- Spoon strawberries into dessert glasses. Pour champagne over berries.

- Rinse and haul strawberries except one, leave with haul on used for decoration.
- Put the rest of the strawberries in a blender.
- Add vanilla, lemon juice, and sugar and puree.
- Pour into a tall champagne glass.
- Fill glass with ice cold champaign.
- Cut an opening in the bottom of the remaining strawberry and slide on edge of glass.
- Enjoy.

- Squeeze lemon juice (should be 2-3 tbsp) into a cup and set aside.
- In a saucepan, combine sugar and water and bring to a boil; stir often, until sugar is dissolved, then set aside to cool.
- Add the lemon juice to the cooled water/sugar mixture. Stir in the sliced strawberries and toss to coat well.
- Cover and chill for about 2 hours (so berries sweeten), TOSSING EVERY 20 MINUTES.
- After chilling time; divide berries among 6 champange glasses.
- Pour chilled pink champagne over top.
- Garnish with mint sprigs.
- Give a toast and enjoy!
