CRAB-STUFFED PIQUILLO PEPPERS

Crab-Stuffed Piquillo Peppers image

Steps:

  • Make the aioli: Heat the paprika and vegetable oil in a small saucepan over low heat. When hot, remove the pan from the heat and allow the oil to steep at room temperature, 20 minutes. Transfer to a small bowl and refrigerate at least 1 hour.
  • Combine the egg yolk, vinegar and lemon juice in a food processor or blender; process until smooth and frothy. With the machine running, slowly pour in the paprika-infused oil and process until the desired consistency is reached. Season with salt. (The aioli can be made up to 3 days ahead; refrigerate in an airtight container.)
  • Make the filling for the peppers: Combine the mayonnaise, creme fraiche, mustard, lemon juice, manchego, parsley, chives and egg in a large bowl; mix thoroughly with a rubber spatula to combine. Gently mix in the crabmeat (do not break it up too much). Season with salt and pepper.
  • Drain the piquillo peppers thoroughly. Remove the seeds, making sure to keep the peppers whole and intact. Carefully spoon about 1 tablespoon crab filling into each pepper. Transfer to an ovenproof baking dish, such as a cazuela. (The peppers can be filled 1 day ahead; cover and refrigerate.)
  • Preheat the oven to 375 degrees F. Transfer the peppers to the oven and bake, uncovered, until heated through, about 15 minutes. Top the peppers with the aioli and return to the oven until the aioli is hot, about 2 more minutes.

1/2 cup vegetable oil
1 large egg yolk
1 tablespoon sherry vinegar
Juice of 1 lemon
Kosher salt
For the peppers:
3 tablespoons mayonnaise
3 tablespoons creme fraiche
2 teaspoons dijon mustard
1 teaspoon fresh lemon juice
1/4 cup grated manchego cheese
2 tablespoons finely chopped fresh parsley
2 tablespoons finely chopped fresh chives
1 large egg, lightly beaten
8 ounces jumbo lump crabmeat, picked through
Kosher salt and freshly ground pepper
1 16-ounce jar piquillo peppers

STUFFED PICKLED PEPPERS

A lot of trouble to make, but well worth while. Old time cooks called these and stuffed fruits "mangoes". They were favorites in English-American homes because the flavor is superb with baked ham, game, roast pork, and with baked beans. Serve whole as a salad or slice and use as garnish. Stuffed Pickled Peppers image

Steps:

  • Wash all vegetables well before chopping, drain peppers; cut off tops and save; remove seeds and membranes.
  • Cover tops and peppers with water in a sauce pan and bring to boiling; boil gently 10 minutes, or until almost tender.
  • Drain and let cool. Combine chopped vegetables.
  • Mix remaining ingredients ( down to pickling brine) and pour over vegitables and mix well.
  • Stuff into peppers , do not pack too tightly.
  • Place tops on peppers.
  • Tie in place with cotton string.
  • Place peppers in wide mouth jars or stone crock.
  • Heat together in a agate or enamel kettle all of the brine ingredients except the oil.
  • Bring this mixture to a boil; pour over stuffed peppers.
  • Let cool.
  • To each 3 peppers in a jar or crock add about half cup olive oil.
  • Cover. Let stand in a cool place 10 days or longer before serving.
  • To serve remove string, drain peppers.
  • Note: The remaining oil and spice mixture can be used as a salad dressing or marinade.

The Best Stuffed Peppers image

Steps:

  • If your peppers don't sit upright on your cutting board, trim about 1/8-inch off the bottoms to even them out so they can stand without falling over. Cut the top off each pepper about 1/2-inch down. Remove and discard the stems, then finely chop the remaining flesh from the tops. Scoop out the seeds and as much of the membranes as you can. Place the peppers in a large microwave-safe bowl with 1/2 cup water. Cover with plastic wrap and microwave on high power for 12 minutes. Carefully uncover and let them sit until ready to assemble.
  • Heat 2 tablespoons of the oil in a large skillet over medium-high heat. Spread the beef in an even layer and cook undisturbed until lightly browned, about 3 minutes. Toss and continue to cook, breaking up any clumps with the back of a spoon and scraping up any browned bits from the pan until the meat is lightly browned all over, 6 to 8 minutes. Transfer the browned meat to a large bowl with a slotted spoon.
  • Reduce the heat to medium. Heat the remaining 1 tablespoon oil and add the reserved chopped peppers, onions, garlic, thyme, 4 teaspoons salt and 1/2 teaspoon pepper and cook, stirring occasionally, until tender but not browned, 10 to 12 minutes. Add the tomatoes and cook, stirring occasionally, until falling apart and much of the liquid has evaporated, about 7 minutes.
  • Stir in the tomato paste and cook, stirring constantly until brick red colored, about 1 minute. Stir in the wine and cook until the mixture is reduced, very thick and no smell of alcohol remains, 6 to 8 minutes. Add the broth and bring to a boil. Transfer to the bowl with the beef. Stir in the rice until completely combined. (The mixture will be wet.) Season with salt and pepper.
  • Arrange a rack in the center of the oven and preheat to 450 degrees F.
  • Place the peppers cut-side up in a 13-by-9-inch baking dish. Spoon the filling into the peppers, gently pressing it in with the back of a spoon. Be careful not to overstuff and split the sides of the peppers. Bake for 15 minutes. Then top with the cheese and continue baking until the filling is heated through and the cheese is browned in spots, 10 to 12 minutes.

Sausage and Cheese-Stuffed Poblano Peppers with Quick-Pickled Red Onions and Radishes image

Steps:

  • Position a rack on the top of the oven and preheat to broil.
  • Combine the vinegar, sugar, 1 teaspoon salt and 1/3 cup warm water in a mason jar. Cover and shake to combine until the sugar and salt dissolve. Add the onions and radishes and set aside.
  • Drizzle the oil over the peppers, season with 1 teaspoon salt and arrange on a baking sheet cut-side up. Broil on the upper rack of the oven until blistered and softened, 4 to 6 minutes.
  • Mix together the pork, garlic, paprika, chili powder, cumin and 2 teaspoons salt in a large bowl. Transfer to a large skillet over medium-high heat and cook, breaking up the pork into small pieces with a wooden spoon, until browned and cooked through, 5 to 6 minutes. Remove from the heat, drain the excess fat and set aside to cool.
  • Stir half of the cheese into the pork. Distribute the mixture evenly in the cavities of the peppers. Top with remaining cheese and broil until melted and bubbly, 2 to 3 minutes.
  • Top with the pickled onions and radishes. Garnish with cilantro and enjoy!

Pickled Sauerkraut-Stuffed Banana Peppers image

Steps:

  • Wash, cut tops off, and core out the peppers.
  • Pack each pepper with as much sauerkraut as possible.
  • Put peppers into into clean jars.
  • Have ready a solution of sugar and vinegar that has been heated to boiling.
  • Place jars in hot pan or sink of hot water.
  • In separate pot, heat plain water to boiling and pour over peppers.
  • Let stand a few minutes, then pour off water.
  • Add the 1/2 tsp salt, 1/2 tbsp oil, 2 tsp pickling spice, and dash turmeric to each jar.
  • Pour sugar and vinegar solution over peppers.
  • Seal jars, and let cool.
  • Let stand at least one week before eating.
  • Best when eaten cold, but unopened jars can be stored at room temperature.
