FRESH FRUIT AND YOGURT ICE POPS
Simple and wholesome popsicles. My mom used to help us make these when we were kids and I still enjoy them years later. Use honey as an alternate sweetener, and blend the fruit to be either chunky or smooth.

Steps:
- Puree everything but one cup of fruit in a blender. Add remaining and pulse about 3 times. You want the fruit broken down to small pieces.
- Pour into 8 one half cup molds.
- Note: Grab those old paper cups. They work just fine. Insert wooden stick into mold and freeze until firm at least four hours.
- Note: I haven't tried this with the soymilk yogurt. When I do I will update.

- Whip the cream with a whisk until just before soft peaks start to form. In other words, you should be able to see lines in the cream as you whisk it, but it should not reach soft peak stage. (You want it to no longer be liquid, but you also don't want too much air in your cream.)
- Make sure your popsicle molds are dry (we use a thin cloth and a chopstick to push the cloth inside each popsicle mold to make sure they’re dry), or you’ll get ice crystals on your popsicles.
- Pour the mixture into dry popsicle molds, making sure there are no air pockets. A chopstick or extra popsicle stick is a great way to tamp down the yogurt mixture and fill in any holes. Finally, tap the popsicles against the counter to pop any air bubbles.

- If you have truvia, that's what I used, but any other sweetener will work as long as you make sure to "scale it." Truvia is more concentrated, so you will need more of plain sugar or honey - about 2-3 tablespoons.
- Add any sweeteners to taste, because depending on the fruit you used it may be sweet enough without sweetener.
- Pour the completely smooth mixture into a prepared popsicle mold or paper cups (and use a popsicle stick if going the paper cup route).
