SUNDAY ROAST CHICKEN

This recipe proves that comfort food doesn't have to be full of unwanted calories. Mixed with orange and lemon juice, my roast chicken is both flavorful and healthy. -Robin Haas, Cranston, Rhode Island.

Sunday Roast Chicken image

Steps:

  • Preheat oven to 350°. Using a sharp knife, trim stalks and root end of fennel bulb. Cut bulb lengthwise into quarters; cut and remove core. Cut fennel into 1-in. wedges. Place fennel, carrots and three of the onion quarters in a shallow roasting pan, spreading evenly., Cut lemon in half; squeeze juice into a small bowl, reserving lemon halves. Stir minced garlic, honey, salt, pepper flakes and pepper into juice., Place chicken on a work surface, neck side down. With fingers, carefully loosen skin from the tail end of the chicken breast. Spoon juice mixture under skin of breast; secure skin with toothpicks. Place garlic cloves, lemon halves and remaining onion inside chicken cavity. Tuck wings under chicken; tie drumsticks together. Place chicken over vegetables, breast side up., Pour orange juice over chicken. Roast 1-1/2 to 2 hours or until a thermometer inserted in thickest part of thigh reads 170°-175°. (Cover loosely with foil if chicken browns too quickly.), Remove roasting pan from oven; increase oven setting to 450°. Remove chicken from pan; tent with foil and let stand 15 minutes before carving., Meanwhile, return roasting pan to oven; roast vegetables 10-15 minutes longer or until vegetables are tender and lightly browned. Using a slotted spoon, remove vegetables from pan. If desired, skim fat from pan juices and serve with chicken and vegetables.

Steps:

  • 1. Remove the inside neck and giblets from the inside of chicken. Rinse chicken well ,inside and out. Pat chicken dry. Now rub the seafood seasoning inside and out. Now stuff cavity with the quartere onions. Salt and pepper if you like. Put inside of a white plastic kitchen can liner, close , and put in the refrigerator...OVERNIGHT !!
  • 2. Next day...remove chicken, from bag, and put in a roasting pan. Roast uncovered in the oven set at 250 Degree oven for 5 hours. I repeat" 250 degrees...5 hours! Baste occasionally . Rest the bird 10-15 minutes, before carving. Remember leftover bones and chicken pieces, make a great soup.
  • 3. ********************** WARNING...********************************************** PLEASE do not use the white kitchen bags in this recipe!! They are scented...and I was told to not use them in this recipe!!.Try using a clear plastic cooking bag...that will cover the chicken . OR maybe , put the chicken in a mixing bowl and cover and seal the top with foil. That should work well.

"Sunday Best", though, also referred to the best meal of the week that was served around noontime on Sundays. Growing up in a farm community, dinner was simple but oh, so good! Roast chicken was always a welcomed...

  • 1. Remove any "innards" from chicken. Rinse chicken and cavity with cold water, pat dry with paper towel. Oil outside of chicken well with olive oil. Sprinkle with seasoning salt inside and out. Place on rack in shallow roasting pan with about a 1/2" of water covering bottom of pan. Sprinkle rest of spices and herbs evenly on outside (and a little inside) of chicken. Tie legs together if desired. Tuck wings under. Roast, uncovered, in 350° oven for about 2 hours or until done. (*About 20 minutes per pound). *Baste well every 30 minutes with melted butter. (You can also baste with juices from the pan when enough accumulate. But start with butter). Let chicken rest for about 15-20 minutes before carving. Great for turkeys and cornish hens, too! *Cut-up potatoes, baby carrots, celery and onions can also be added to the pan if desired for a "one pot wonder"! And gravy can be made from the drippings.

1 (5-6 lb.) roasting chicken
about 1-2 tbl. olive oil, enough to coat
2 tsp. johnny's seasoning salt, or your own favorite
2 tsp. paprika
1 tsp. garlic powder
2 tsp. dried thyme, crush between fingers when sprinkling
1 tsp. dried italian seasoning
1/2 tsp. or so of fresh cracked black pepper
1 stick butter, melted

Steps:

  • ROASTED CHICKEN: Place the chicken in a roasting pan. Combine the paprika, thyme, parsley, achiote, tarragon, garlic, salt and pepper in a small bowl.
  • Rub the mixture all over the chicken, including underneath the skin. Cover with plastic wrap and let marinate for at least 2 hours or overnight.
  • Preheat oven to 350 degrees.
  • In a small bowl, mix the lemon juice, honey and rum. Stir well and pour over the chicken and under the skin, rubbing the mixture in well to absorb.
  • Lastly, spoon the melted butter all over the chicken. Cover chicken with aluminum foil and place in oven; roast for 1 1/2 to 2 hours until fully cooked. Remove foil last 30 minutes of roasting.
  • OPTIONAL PAN GRAVY: A pan gravy can be made with the drippings by transferring the drippings from the roasting pan to a small pan. Add the chicken stock, rum and herbs. Simmer the liquid for 10 minutes or until the gravy has reduced and thickened slightly.
  • Adjust seasoning with salt and pepper and pour into a gravy boat.
  • Serve on the side with lime wedges.

Steps:

  • Preheat oven to 300 degrees.
  • Clean chicken cavity and rinse thoroughly.
  • Place in a large roasting pan.
  • Place half of chopped onion inside the of the chicken, and other half around chicken as a bed.
  • Add chopped potatoes to the bed around the chicken.
  • Drizzle olive oil over chicken and vegetables.

  • Place the shallots and garlic in a roasting pan and toss with the olive oil (it's okay if the garlic breaks apart a bit). Pat the chicken VERY dry with paper towels (this will help the skin to crisp) and place in the roasting pan; do not crowd. Use a soup spoon to rub the herb butter all over the chicken and under the skin too (if you don't eat the skin, rub a lot of it underneath!). Sprinkle the kosher salt evenly all over the chicken and season with fresh pepper to your liking. Place the chicken in the oven and roast for 35-40 minutes, or until the skin is golden brown. Turn the heat down to 375 degrees; continue to roast for 15-20 minutes more, or until done. Chicken should be done in less than an hour; do not overcook.
  • Transfer the chicken and the shallots to serving platter to rest and cover with foil. Discard the garlic. Pour off all the fat, leaving the brown baked-on bits in the bottom of the roasting pan. Add the chicken broth and place on the stove over high heat; bring to a boil and whisk in Dijon mustard. Using whisk or wooden spoon, stir up and combine the brown bits with the broth and continue to cook until the liquid is reduced by half, 5-8 minutes. Turn off the heat and stir in the butter. Pour the sauce into a gravy boat and serve alongside chicken. (If you want to get fancy, you can strain the gravy but I never bother.)
