Steps:
- In a mixing bowl, whisk the egg and milk together.
- Add in the sausage, crackers, onion, and pepper; mix well using your hands to incorporate ingredients.
- Place mixture in a lightly greased 8x4x2 inch loaf pan.
- Bake in a 350°F oven for about 1 hour or until sausage is no longer pink.
- Pour off excess grease.
- Let stand for 5 minutes; remove from pan and slice.

Steps:
- In a meat grinder, coarsely grind the pork, beef, and pork fat, in batches. Add all the remaining ingredients except the casings. Mix well and allow to sit while you clean the casings.
- Rinse the casings thoroughly in cold water and run fresh water through them. Drain. Using a sausage machine, a KitchenAid with a sausage attachment, or a sausage funnel, fill the casings and tie them off into about 16-inch lengths. Do not fill them too tightly as they must have room to expand when they cook.
- Hang the sausages in a home-style smoker and smoke them for about one hour. Do not allow the temperature of the smoker to go above 150.
- Remove the sausages and hang over a stick or dowel. Put the stick in a cool place and position an electric fan so that it will blow directly on the sausages. Allow them to dry for two days. They are ready for use. Place them in the refrigerator, where they will keep well for about a week.

KILLER HUNGARIAN MEATLOAF
First the name is a goof. This meatloaf has nothing to do with my being Hungarian except that I am so it's an appropriate title. This is an adaption of another recipe I found elsewhere (heavily changed too I add). I happen to think it's killer. Hope you do too.

Steps:
- combine first 10 ingredients in large bowl, I use my hands to break up meat then a spoon to add veggies.
- make a well in middle and add beaten eggs to bread crumbs in the well, then use spoon to mix with meat mixture.
- layer 1/2 meat mixture in 13 x 9 inch pan, (I prefer a glass pan).
- lay cheese over meat keeping it 1 inch from edge.
- layer the rest of the meat over the cheese and pat into shape.
- use a blender to puree tomato(s).
- add sugar and vinegar to pureed tomato, mix well then pour over meat loaf.
- bake at 375 degrees Fahrenheit for 1 hour 15 minutes.
- serve and enjoy.

- Saute mushrooms in butter 3-5 min, stirring, in small skillet. In large bowl, combine all ingredients. Thoroughly mix with hands. Shape into loaf and place in shallow roasting pan. Cover with foil and bake in preheated oven for 1 hour at 350 degrees F.

- Optional: If you decide to add hard-boiled eggs to the meatloaf, place the eggs in a sauce pot, add enough water to cover the eggs. Bring to a boil, remove from heat, and allow them to sit for 10 minutes. Remove the hot water and rinse with cold water. Peel shells and add to the center of the meatloaf by laying half of the meat to the baking dish, line up the eggs, and add the remaining meat mixture creating the shape of a meatloaf.
- Preheat oven to 350°F. In a large bowl, combine and mix together ground beef, ground pork, onion, garlic, egg, bread crumbs, parsley, salt and black pepper.
- Spread the vegetable oil in a baking pan/dish, or a large loaf pan. Add the meat mixture and begin shaping it into a loaf. Just to point out, if you place it in a baking pan/dish, the loaf will tend to relax, however in a large loaf pan, it will hold it's shape.
- Cook the meatloaf for about 60 minutes. Remove the lid about 15-20 minutes before it's done to get a nice crispy coating on top of the meatloaf. Remove from the oven when cooked and return the lid and allow it to sit for a few minutes before cutting.
