SUNNY CORN BREAD MUFFINS

Corn kernels add sunny taste and texture to these moist muffins, a great accompaniment to our summer barbecue. They're especially good warm, so if I bake them ahead, I warm them on the grill or in the microwave before serving. -Nancy Zimmerman, Cape May Court House, New Jersey

Sunny Corn Bread Muffins image

Steps:

  • In a large bowl, combine the flour, cornmeal, sugar, baking powder and salt. In a small bowl, whisk the egg, buttermilk and oil. Stir into dry ingredients just until moistened. Fold in corn. , Fill greased muffin cups three-fourths full. Bake at 400° for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease or line 12 muffin cups.
  • In a large bowl, cream together butter, sugar, honey, eggs and salt. Mix in flour, cornmeal and baking powder; blend thoroughly. Stir in milk and corn. Pour or spoon batter into prepared muffin cups.
  • Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into center of a muffin comes out clean.

Sunny's Easy Bacon and Cheese Stuffed Corn Muffins with Jalapeno Jelly Glaze image

Steps:

  • For the batter and filling: Preheat the oven to 400 degrees F.
  • In a large bowl, add the cornbread mix. In a medium bowl, whisk the milk, paprika, bacon, eggs, scallions and lime zest. Fold the egg mixture into the cornbread mix. Let rest 5 minutes.
  • In a 12-cup muffin tin lined with muffin liners, divide half of the batter among all 12 cups. Then add the mozzarella in an even layer and top each with a piece of pepper jack. Gently press down to make everything even. Pour over the remaining batter and spread evenly. Bake until the tops are golden, about 20 minutes.
  • For the glaze: Meanwhile, in a small pot, add the jelly, lime juice, butter and a splash of water. Heat until the mixture begins to simmer.
  • Remove the muffins from the oven and immediately pour a spoonful of the glaze over the top of each. Serve warm.

Steps:

  • Preheat oven to 350 degrees F.
  • In a small bowl, mix together strawberries and 2 tablespoons sugar. Let sit 15 minutes until strawberries give off juices.
  • In a small bowl, mix together flour, cinnamon, baking soda, nutmeg and salt.
  • In a large bowl, whisk together the mashed banana, eggs, oil, 1 cup sugar, strawberries, and lemon zest.
  • Mix the dry ingredients into the wet ingredients until combined. Do not over mix. Fold in blueberries and walnuts.
  • Scoop batter evenly into muffin cups. Bake until a toothpick inserted in center of muffin comes out with a few crumbs but not wet, about 30 minutes. Cool on a rack to room temperature.

I really stink at making muffins, I mean REALLY stink at it. I failed muffin class 101, BUT for some reason I came up with this recipe that I have YET to mess up. Go figure! Makes 48 mini muffins OR a little over 12 regular sized muffins. EDITED to change butter from 3/4 to 1/2 cup!!!!

Perfect Cornbread Muffins With Corn! image

Steps:

  • Grease mini muffin tins well then sprinkle the tins with a little flour to really get the tins stick proof! Preheat oven to 475°.
  • Mix flour, corn meal, sugar, baking soda, salt and brown sugar together well.
  • Mix milk, egg, and butter together in another bowl then stir in corn.
  • Pour wet mixture into flour mixture and mix ONLY until just blended. Do not over mix!
  • Scoop mixture into prepared tins and lower oven temp to 425 and bake for 8-12 minutes for mini muffin tins or about 15-20 for regular sized muffins OR until tooth pick comes out clean from the center muffin.
  • Let cool on wire racks.
