SWEET POTATO SURPRISE BALLS - OAMC
A way to use bulk yams or sweet potatoes when you can get them for a good price. You can do with or without orange rind.

Steps:
- Mix together mashed sweet potatoes, eggs, butter, orange rid, brown sugar& vanilla.
- Form into 14 large balls.
- Place in center of each ball 1 large marshmallow and cover it well with mashed-potato mixture.
- Roll ball in cornflake crumbs.
- Flash freeze and bag for freezer.
- When ready to serve, defrost and bake at 400F in buttered baking dish for 10 minutes.

Steps:
- Preheat oven to 350°F.
- Bake the potatoes until tender, then peel and mash them.
- Stir in the brown sugar, orange juice, zest and nutmeg.
- In a separate bowl, toss the coconut with the sugar and cinnamon.
- Press mashed potatoes around each marshmallow, creating a 2 to 3-inch diameter ball.
- Roll the balls in the coconut mixture. Bake for 15 to 20 minutes. Watch carefully for the last few minutes of cooking; the expanding marshmallows can cause the potato balls to burst open.

- Preheat oven to 450 degrees F (230 degrees C). Grease one 8x12 inch baking dish.
- Bring a pot of salted water to a boil. Add potatoes; cook until tender but still firm. Drain, and transfer to a large bowl to cool.
- In a mixing bowl, combine sweet potatoes, bananas, white sugar, brown sugar, pecans, evaporated milk, butter, vanilla, cinnamon and nutmeg. Mix well.
- Pour mixture into baking dish, place coconut on top of potato mixture and top with marshmallows. Bake for 10 to 15 minutes.

SWEET POTATO APPLE BAKE OAMC
Thanksgiving worthy but simple enough for any given Thursday! The classic combination of sweet potatoes, apples, brown sugar and cinnamon make this easy side dish a feezer staple!

Steps:
- Wash and peel the two sweet potatoes. Cut the potatoes into rounds and keep covered with water to prevent them from browning until ready to use.
- Wash and peel the two apples. Core and cut the apples into slices.
- In a large freezer bag, add: sweet potatoes, apples, apple juice concentrate. Squeeze out as much air as possible and seal.
- In a snack size baggie mix together: brown sugar and cinnamon. Seal the bag.
- Place the 2 filled bags into a 2nd large freezer bag, Print recipe to include too. Freeze.
- To cook; thaw.
- Preheat oven to 375 degrees.
- Empty contents of freezer bag into a small pregreased baking dish be sure that potatoes and apples are evenly spread in the pan in layers.
- Sprinkle the brown sugar and cinnamon mixture over the top of the sweet potatoes and apples.
- Sprinkle the butter evenly over the entire dish.
- Bake for about 45 minutes or until potatoes and apples are tender.

- Heat oven to 450°. Grease bottom and sides of square pan, 8x8x2 inches, with shortening. Mash sweet potatoes and brown sugar. Shape 1/3 cup potato mixture around each marshmallow into a ball.
- Brush 1 sweet potato ball at a time with butter; roll in cornflake crumbs to coat. Place in pan. Bake uncovered 8 to 10 minutes or until coating is light brown.

- Preheat the oven to 375 degrees F. Place the drained sweet potatoes into a large mixing bowl; mash well, add the egg and 3/4 tsp. of salt, mashing again until the sweet potato mixture is well combined and rather “fluffy” in texture. (Feel free to use an electric mixer.)
- Using your hands, place some of the prepared sweet potato mixture into your palm, then add a marshmallow into the center; top with a bit more sweet potato mixture, forming it around the marshmallow, making each sweet potato ball slightly smaller than a tennis ball in size. (I like to divide my sweet potato mixture in half, then divide each half into 6 portions or so, which helps to make the 12 sweet potato balls more even in size.)
- Place the crushed corn flakes into a shallow dish. Gently roll each sweet potato ball in the corn flakes, packing them lightly with your hands so they stick. Place te balls side-by-side, but not touching, into a greased 9 x 13 baking dish. Lightly spray the top of of the sweet potato balls with nonstick spray.
