Steps:
- Mix together brown sugar, honey, soy sauce, ginger, garlic and hot sauce in a small bowl.
- Lightly salt and pepper the chicken strips.
- Heat oil in a large skillet over medium heat. Add chicken strips and brown on both sides, about 1 minute per side. Pour the sauce over the chicken. Simmer uncovered until the sauce thickens, 8 to 10 minutes.

SWEET AND SPICY ROAST CHICKEN
A chile-flecked, honey-imbued marinade spiked with fresh citrus juice gives this chicken its fiery, syrupy character. Dates and carrots give the sauce texture and additional sweetness while a garnish of fresh herbs and pistachio nuts lends freshness and crunch. It's dinner party food at its most flavorful and convenient; its honey marinade makes it a particularly wonderful main course for Rosh Hashana, the Jewish New Year. The ingredients can be assembled up to 24 hours in advance, then all you need to do is pop it in the oven just before your guests arrive, and garnish it at the last minute. Serve it with couscous, polenta, rice or another soft grain to soak up the sauce.

- Quarter the lemon lengthwise, removing any seeds. Thinly slice crosswise into small wedges and add to small pot of boiling, salted water. Blanch for 2 minutes and drain. Reserve slices.
- In a saucepan, whisk together lemon juice, orange juice, oil, mustard, honey, salt, bay leaf, red pepper flakes and black pepper to taste. Bring to a boil and simmer for 5 minutes. Let cool.
- Put chicken in a bowl and add honey mixture. Add carrots, onion, dates, thyme and blanched lemon slices. Turn mixture several times to coat. Let marinate for at least 30 minutes at room temperature, but preferably overnight in the refrigerator.
- Heat oven to 425 degrees. Transfer all ingredients, including marinade, to a sheet pan with a rim. Chicken should be skin side up. Roast until chicken is browned and cooked through, about 20 to 30 minutes for breasts and 30 to 40 for legs and wings (remove the pieces as they are done cooking). When the chicken is done, give the carrot mixture in the pan a stir; if the pan looks dry add 2 to 3 tablespoons water. Continue roasting the carrots until they are tender, about 7 to 12 minutes longer.
- Spoon carrots over chicken and top with cilantro, scallions and pistachio nuts.

SWEET & SPICY CHICKEN
This recipes comes from me trying to "fix" another recipe on the site but it ended up being a whole new recipe. I think it turned out very well, and It's something we really enjoy. Make it as sweet or spicy as you like by messing with the amounts of brown sugar (not the molasses!) and chili flakes. Enjoy! This recipe includes sauce for rice but be careful, if you cook it too long the chicken will soak up the sauce fast, if your looking for more of a sticky glaze, cook it a little longer and leave the lid off during most of the cooking. I have only made it sticky without the vegetables added, so if your worried about overcooking, wait to add or cook them separately. I would also suggest chopping into pieces when raw and pan frying the chicken to help seal it some so it doesn't break down as much when cooking. I would be wary reducing the amount of water to reduce cooking time, as it changes the flavor, and not for the better IMHO.

- Place all sauce ingredients in a large chefs pan or anything large with a lid.
- Cook on medium heat, stirring constantly, until slightly bubbly and combined.
- Add chicken and vegetables, if desired, Stir to coat.
- Cook on medium/high heat, covered, for 20-30 minutes (stirring every 10 minutes, more if its a pan that sticks) or until desired thickness is achieved and chicken (and veggies) are heated through.
- I like it served over rice.

- In a medium bowl, mix together the paprika, garlic powder, salt, onion powder, thyme, cayenne pepper, and ground black pepper. Set aside about 3 tablespoons of this seasoning mixture for the chicken; store the remainder in an airtight container for later use (for seasoning fish, meats, or vegetables).

- Preheat oven to 375.
- Mix oil and garlic.
- Arrange chicken and potatoes in a shallow roasting pan.
- Brush well with oil and sprinkle with half the rosemary, and salt, pepper, and paprika to taste.
- Bake 25 minutes.
- Remove from oven, turn chicken and potatoes; sprinkle with remaining rosemary and salt, pepper and paprika to taste.
- Bake 25 minutes longer and check for doneness. Chicken is done if juices run golden or clear when pierced at a heavy joint. Chicken should be crisp and lightly browned.
- Sprinkle scallions and red pepper over chicken. Bake 5 more minutes.
- Sprinkle lemon juice and wine over chicken. Place on hot platter and pour any pan juices over it.,.
- Serve hot.
- Tips: Use breasts and thighs for generous servings. But if you want wings, add them at step 3, since they cook quickly. Roasted red peppers in jars will do when sweet red peppers are not available.

I created this recipe for the contest using some leftover chicken and rice. I was pleasantly surprised with the results. It is a fun, colorful and delicious meal that is easy to prepare but tastes like it took a long time! (and it's not super spicy either!)

- Remove pre-boiled chicken breasts from fridge.
- Season with sea salt, 3 pinches of cumin and 4 grinds of fresh black pepper and slice thinly.
- Heat 1/2 tbs oil on med heat in a large frying pan and add garlic.
- Brown garlic slightly (do not caramelize).
- Add chicken and zucchini and almost all of the paprika and another 1/2 tbs oil; add adobo and sugar sprinkling on entire mixture and stirring in gently -- let it brown, flip and sprinkle the other side.
- Cook on med heat, flipping regularly until slightly browned, slide chicken and zucchini to one side and then add banana slices.
- Continue to cook on med heat turning bananas until browned; remove from heat and set aside.
- Add remaining oil to pan, heat and then stir in corn.
- Dash with remaining paprika.
- turn up the heat slightly (in between high and med).
- Add margarine and a few cracks of fresh pepper.
- Brown corn stirring every so often (it will start to make a popping sound).
- Add sweet red pepper for color.
- Stir in rice and water and cook until hot, stirring constantly.
- Salt and pepper to taste.
- Remove from heat and set aside.
- Return chicken mixture to pan to heat.
- Divide rice mixture onto two plates and top with chicken mixture add a dallop of sour cream to each.
- Serve immediately with warm greens of your choice (I prefer kale with this dish).
