OVERNIGHT BACON AND SWISS BREAKFAST
When we have overnight guests, I like to prepare things ahead of time so we can enjoy our company. It often gets crazy when everyone first wakes up, and I like to have food available whenever people are ready to eat. - In a greased 4- or 5-qt. slow cooker, layer potatoes, bacon and cheese. In a large bowl, whisk eggs, milk, seasoned salt and pepper; pour over top. Cook, covered, on low until eggs are set, 4-5 hours. Turn off slow cooker. Remove crock insert to a wire rack; let stand, uncovered, 30 minutes before serving. Garnish with minced chives, if desired.

- 1. BATTER: Combine eggs, salt, milk, cottage cheese, flour, honey, and oil in food processor or blender. Process until smooth.
- 2. Heat butter in a 9- or 10-inch nonstick skillet over medium heat. Pour one-fourth of batter about a half-inch thick into bottom of pan. Cover and cook until top loses its gloss, then flip over and cook the other side until lightly browned.
- 3. Carefully remove to a plate and keep warm. Repeat with rest of batter until 4 large pancakes are cooked. These pancakes will be slightly fragile, so use care not to tear them.
- 4. FILLING: Combine apples, butter, honey, and cinnamon in a small pan. Heat over medium heat until apples are cooked through.
- 5. ASSEMBLY: Place one pancake on serving dish. Top with half of filling. Place second pancake over top of filling. Dust with confectioner's sugar. Prepare second pancake the same way. Each stacked cake serves 2 people. Cut and serve accordingly.

- Place flour into a bowl, creating a small hole in the center. Sprinkle salt around the edge and place yeast and sugar into the hole.
- Mix egg and egg white together in a 2-cup measuring cup. Add enough water to reach the 1 1/4 cup mark. Stir in milk. Add melted butter. Pour into the center of the flour. Mix thoroughly, adding more milk or flour as needed until dough is smooth and elastic. Cover the bowl with a damp cloth and let rise for 30 minutes.
- Cut dough in 1/2. Form each 1/2 into a long roll. Lay rolls out in front of you on a work surface in an 'X' shape. Braid bread by constantly switching the ends. Place bread onto a baking sheet, cover with a damp cloth, and let rise for 15 minutes.
- Preheat the oven to 375 degrees F (190 degrees C).
- Brush bread with beaten egg using a pastry brush.
- Bake in the preheated oven on the middle rack until golden, about 30 minutes.
