SPICY SICHUAN-STYLE PRAWNS

Stir-fry shellfish with a spicy tomato, ginger and chilli bean sauce for a classic Chinese seafood dish

Spicy Sichuan-style prawns image

Steps:

  • Heat a wok over a high heat. Add the groundnut oil and, when it is very hot and slightly smoking, add the ginger, garlic and spring onions. Stir-fry for 20 secs, then add the prawns. Stir-fry for about 1 min, then add all the sauce ingredients, along with ½ tsp salt and ½ tsp ground black pepper. Continue to stir-fry for another 3 mins over a high heat. Serve at once, scattered with the coriander and spring onion.

450g raw prawns , shelled and de-veined
1 tbsp tomato purée
3 tsp chilli bean sauce
2 tsp Chinese black vinegar or cider vinegar
2 tsp golden caster sugar
2 tsp sesame oil
handful coriander leaves, to serve
sliced spring onion , to serve

SZECHUAN CHILLI PRAWN PIZZA

Inspired by Crust Pizza's pizza of the same name. You can drizzle with the remaining sweet chilli sauce prior to cooking if you prefer, instead of after.

Steps:

  • Add chilli flakes and pepper to the prawns and mix well. Refrigerate while preparing the rest of the pizza.
  • Grill the zucchini slices under a grill pre-heated on high, until golden. Set aside.
  • Mix the tomato paste with 1/2 tblsp of the sweet chilli sauce and cover the pizza base evenly with it.
  • Spread the zucchini slices, mushrooms and capsicum evenly over the pizza.
  • Add the prawns and bocconcini pieces, then sprinkle with sliced spring onions.
  • Sprinkle sparingly with mozzarella cheese, if using.
  • Cook the pizza in the pizza maker or oven until prawns are cooked - approximately 8 to 10 minutes.
  • Drizzle with the remaining sweet chilli sauce to taste then serve.

1/2 red capsicum, sliced in thin strips
4 button mushrooms, sliced
2 spring onions, sliced diagonally into 1 cm pieces
3 bocconcini, quartered
2 tablespoons sweet chili sauce
shredded mozzarella cheese (optional)

Summer Sweet Chilli Prawn Salad image

Steps:

  • De-vein the prawns and set aside.
  • In a large bowl combine the coleslaw, corn niblets, pumpkin seeds, rocket leaves and crispy noodles.
  • Combine the last 6 ingredients in a small bowl to make the dressing. Whisk well.
  • Arrange the salad on a large serving platter, top with prawns and drizzle over the dressing.
  • Garnish with mint leaves and fried spring onions.
  • Serve.

SWEET CHILLI PRAWN CAKES

These prawn cakes are a great appetizer or small finger food to serve with drinks. They can be made in huge batches, all shaped and kept in the freezer. And when you need them (which will be often), just take them out and shallow fry. It is ready to be served. Great for unexpected guest.

Sweet Chilli Prawn Cakes image

Steps:

  • Place prawn meat, egg white, lime leaves, sweet chili sauce, corn flakes and rice flour in a food processor and process till the mixture is combined, BUT not smooth.
  • With wet hands, shape the mixture into small cakes.
  • Heat enough oil in a frying pan over medium heat to shallow fry.
  • Add prawn cakes a few at a time and cook for 3 minutes on each side, or till golden brown.
  • Place the cooked prawn cakes on kitchen towels to soak up the excess oil.
  • Serve with the extra sweet chili sauce.

600 g green prawns (raw)
1 egg white
2 fresh lime leaves, shredded
3 tablespoons sweet chili sauce
2 cups fresh corn flakes, crushed finely
