HUMMUS WITHOUT TAHINI

Greek yogurt imparts a silky texture to this hummus without tahini.

Hummus Without Tahini image

Steps:

  • Sprinkle garlic clove with 1/4 teaspoon salt and mash with the back of a knife to form a paste. Add to food processor along with chickpeas and their reserved liquid, lemon juice, cumin, nutmeg and yogurt. Stream in olive oil, adding enough to reach a smooth consistency. Season with salt and pepper.
  • Transfer to a bowl and serve with crudites, such as carrots, radish, and endive, and pita chips. Hummus will keep in an airtight container for up to 1 week.

1 small clove garlic
Coarse salt and freshly ground pepper
2 15-ounce cans chickpeas, rinsed and drained, 1/3 cup liquid reserved
2 tablespoons lemon juice (from two lemons)
1/4 teaspoon ground cumin
Pinch of freshly grated nutmeg
1/4 cup Greek yogurt
3 to 4 tablespoons extra-virgin olive oil
Crudites and pita chips, for serving

Steps:

  • Combine garbanzo beans, olive oil, lemon juice, garlic, salt, coriander, cumin, and cayenne in a food processor. Add 4 tablespoons reserved bean liquid and process until hummus is smooth.

ROASTED RED PEPPER HUMMUS (TAHINI-FREE)

I love hummus - but I hate paying for it at the store because I know how cheap the actual ingredients are, so I started to make it myself! I never have tahini on hand, so I do without. Makes the perfect snack at work along with some carrots, sugar snap peas, and cucumbers! I never measure the spices, so below are approximations. **You can also use dried/cooked chickpeas instead of canned.

Roasted Red Pepper Hummus (Tahini-Free) image

Steps:

  • Drain both cans of chick peas, reserving the liquid from one of the cans.
  • Add both cans of beans to food processor along with 1-2 cloves of peeled garlic (no need to chop, the food processor will take care of that!), about half a jar of roasted red peppers in water (also add a bit of the liquid if you'd like to boost the pepper flavor), juice from 1/2 lemon, cumin, chili powder, and some salt.
  • Drizzle in olive oil (I usually use do one turn of the food processor, approximately 1 TBSP).
  • Blend for about 30 seconds. Add some of the chickpea liquid if needed to get the right consistency.
  • Continue to blend until smooth and creamy, scraping the sides and adding more liquid as needed.
  • Enjoy with your favorite veggies or pita chips. My favorites are carrots, cucumber slices, sugar snap peas, and red bell peppers!

  • In a small, non-stick skillet over medium heat add the unpeeled cloves of garlic and dry toast them, shaking the skillet occasionally, until browned - about 5 minutes. Remove from heat. Peel skin and press through a garlic press.
  • After draining the chickpeas, pick through them to remove any visible skins. Don't spend a lot of time doing this - just remove the ones that have already fallen off.
  • Add the drained chickpeas, water, olive oil and juice from the 1/2 lemon to the bowl of a small food processor and pulse until well blended.
  • Add the toasted garlic, parsley, cumin, paprika and 1 teaspoon of kosher salt. Puree until smooth. Taste the hummus and add more salt if desired.
