CABBAGE AND CHEDDAR GRATIN
This is from the Whole Foods Market's website. I haven't tried it yet but intend to do so soon. I love cabbage, its nutritional benefits, and low cost. This recipe has some interesting additions that should add some zip. I'll edit this after I make it.

Steps:
- Preheat oven to 350°F
- Set aside 1/4 cup of the cheese.
- Toss remaining ingredients together in a large bowl and transfer to an 8-inch square baking dish.
- Cover with foil and bake 45 minutes.
- Uncover, top with reserved cheese and bake until golden brown, 10 to 15 minutes more.

- In a large skillet coated with cooking spray, saute the cabbage, carrot and onions until for 7 minutes or crisp-tender. Transfer to a greased shallow 1-qt. baking dish. , In a bowl, combine the egg, milk, Swiss cheese and seasoned salt. Pour over the vegetables. Sprinkle with parsley and Parmesan cheese. Bake, uncovered, at 350° for 30-35 minutes or until a knife inserted in the center comes out clean.

TASTY CHEDDAR CABBAGE GRATIN
I modified a recipe in The Joy of Cooking to make this, which suited our tastes better (and used things I actually had in the house!). I think this would even be a hit with people who don't usually like cabbage. For the "milk or light cream" I used 1/2 cup skim milk and 1/2 cup fat-free half-and-half. I actually used a bag of cole slaw mix (shredded cabbage and carrots) for the cabbage, so this was REALLY quick to make!

Steps:
- Preheat oven to 375°F.
- Butter a baking dish (2 qt casserole dish or 8x8" should both work).
- Dust the dish with about 1/4 cup dried breadcrumbs - discard any extra that don't stick.
- Bring a large pot of salted water to a rolling boil.
- Add cabbage to boiling water, cook for 5 minutes.
- Drain cabbage and gently press out as much water as possible.
- Whisk together in a large bowl: eggs, milk, flour, salt, mustard, and pepper.
- Mix in the 1/2 cup of cheese.
- Stir in the cabbage.
- Pour into the prepared baking dish.
- Top with the 1/4 cup of cheese and 1 tablespoon dried breadcrumbs.
- Bake for 40-50 minutes, until set and golden brown on top.

SCALLOPED CABBAGE
My mother always made this dish as a special treat, and now I do, too. The combination of ingredients is just right-the white sauce and cheese complement the flavor of the cabbage so well that even people who don't care for cabbage like it!

- Preheat the oven to 350°F (180°C).
- Make the béchamel sauce: Melt the butter in a large saucepan over medium heat. Add the garlic and sauté for 3 minutes, or until fragrant.
- Add the flour and whisk into the butter. Cook for 3 minutes, or until lightly browned.
- While whisking, pour in the milk and heavy cream. Season with the salt and pepper. Reduce the heat to low and simmer, whisking frequently, until the sauce coats the back of a spoon, about 10 minutes. Remove from the heat and set aside.
- Remove the leaves and stem from the head of the cauliflower and chop into roughly ½-inch (1-cm) florets. Set aside.
- Trim the Brussels sprouts, then thinly slice. Add the sprouts to a 9x13-inch (23x33 cm) baking dish and push to one side, filling about a third of the dish.
- Add the corn to the center third of the baking dish. Add the cauliflower florets to the remaining third of the baking dish.
- Pour the béchamel sauce evenly over the vegetables.
- Top the Brussels sprouts with the Gruyère cheese and bacon bits.
- Top the corn with the cheddar cheese.
- Top the cauliflower with the Parmesan cheese.
- Sprinkle the bread crumbs evenly over the vegetables.
- Cover the dish with foil and bake for 30 minutes, then uncover and bake for 30 minutes more, until the vegetables are tender and the top is golden brown.
- Serve warm.
