- In a large nonstick skillet, cook onions in butter over medium-low heat until very tender, 30 minutes. Meanwhile, line un-pricked crust with a double thickness of heavy-duty foil. , Bake crust at 450° for 6 minutes. Remove foil; cool on a wire rack. Reduce heat to 425°., Spoon onions into crust. In a small bowl, whisk the egg substitute, milk, salt and pepper; pour over onions. Bake until a knife inserted in the center comes out clean, 30-35 minutes. Let stand for 5-10 minutes before cutting.

- Preheat oven to 350 degrees F (175 degrees C).
- In a mixing bowl, combine crackers and 4 tablespoons of butter in a bowl until well blended. Press into the bottom and 1 inch up the sides of 8 inch pie plate to form a shell. Refrigerate until needed.
- Melt remaining 2 tablespoons butter in heavy skillet over medium heat. Saute onions and garlic slowly until tender, about 12 minutes. Arrange onions in the cracker crust.
- Beat eggs, whole milk, chives, and salt in a bowl until blended. Pour the mixture over the onions. Sprinkle with cheese and paprika.

VIDALIA ONION PIE
A light dinner of Vidalia onion pie, a nice salad on the side, and a ice cold glass of homemade lemonade is perfect for hot summer nights! Optional additions can be sweet red pepper to the onions as they cook and/or crumbled bacon or fresh ham bits may be added to the mixture prior to baking. All versions are great! If desired, a couple Vidalia onion rings look great on the top of the pie for decoration!

- In a medium skillet, cook onions in butter for about 10 minutes, or until clear and soft; stir often. Reserve juices.

- Mix together cracker crumbs and butter and press into a 9" pie pan.
- Place sliced onions into the microwave for 1 or 2 minute.
- Cook onions until clear or translucent and add all the other ingredients.
- Pour filling into the pie crust, & sprinkle the top with paprika and Chives, then bake in a 350° preheated oven for 30 minutes or until set, (slice able).

SWEET ONION PIE
A delicious savory pie from The Times-Picayune. Reasonably healthy when coupled with a nice salad or bag of crunchy vegies, this is a good source of economical protein that tastes great. Excellent warm & at room temp. Travels well for picnics & potlucks. I like cutting into 6 slices & wrapping each one in Saran wrap & putting back into pan for knoshing on the boat. Scattering 2 to 3 inch chives tips across the pie before baking is very pretty.

- Line a 9-inch pie plate with the pastry. Prick the bottom and sides with a fork. Bake at 400 degrees for 3 minutes. Remove from the oven and prick the pastry again. Return to the oven and bake until it is lightly brown. Remove and cool.
- Reduce the oven temperature to 325 degrees.
- In a skillet, fry the bacon until crisp. Remove the bacon and reserve 2 tablespoons of the drippings in the skillet. Crumble the bacon and set aside. Cook the onions in the drippings over medium heat, stirring until soft and lightly golden, 6 to 8 minutes. Drain on paper towels and spoon into the pie shell. Sprinkle with the bacon and cheese.
- In a mixing bowl, beat the eggs, then add the milk, salt, paprika and hot sauce. Mix well. Pour into the pie shell over the onion mixture. Bake until the mixture sets, about 1 hour. Remove and let stand for about 5 minutes before slicing to serve.

- Heat oven to 375 degrees. Melt butter in a large skillet or sauté pan over low heat; set aside. In a food processor, pulse Saltines to fine crumbs and transfer to a medium bowl. Pour four tablespoons melted butter over crumbs and toss with fingertips or a rubber spatula until evenly coated. Press mixture firmly into a deep-dish 9-inch pie pan, using a second pie pan, if possible, to compact them evenly against bottom and sides of pan.
- Reheat remaining melted butter in skillet over medium-high heat until frothy. Add onions and 1/4 teaspoon salt. Cook, stirring occasionally, until onions are evenly browned, 15 to 20 minutes. Transfer onions to pie pan, patting them down in an even layer on crust.
- In a medium bowl, beat eggs with a whisk and add heavy cream and remaining salt, whisking gently to incorporate. Pour mixture slowly, in a thin stream, into center of onions in pie pan. Sprinkle grated cheese over top and place in oven. Bake until puffy and slightly browned on top, 30 to 35 minutes. Slice with a serrated knife into six wedges and serve.

- Pre-heat oven to 375°F. Prepare a 9-inch pie crust by lining it with parchment paper and filling it with beans or pie weights, then partially bake your pie crust for about 15 to 20 minutes in a 375°F oven. (Once you use and cook the beans as pie weights, they will no longer be edible, but you can continue to use them over and over as pie weights.) The pie crust should still be blonde but slightly golden on the edges, the middle should still be mostly raw. Remove from oven, remove pie weights, and set aside. Sauté onions in oil and butter over low heat until golden yellow. Beat together eggs, half and half, flour, salt, pepper, and nutmeg, then add onions and half of the grated cheese. Pour into curst; sprinkle remaining cheese on top. Place pie pan on baking tray and bake at 375°F for 25 to 30 minutes or until golden brown. Garnish with parsley and serve.

Yes, this is an onion pie! It is a real pleaser! I like to serve this when we make BBQ'ed Pork Spare ribs on the grill. This accompanies it perfectly! For this, you need sweet onions like the "Sweet Texas 1015" or the Georgia "Vidalia". Either one works very well! I use the Texas 1015's because I live where they are...

- 1. Preheat oven to 350 degrees. Mix crushed cracker crumbs with melted butter in a bowl. Press into the bottom and up the sides of a glass 9" pie dish. Bake at 350 degrees 10-12 mins. This sets the crust. Remove from oven.
- 2. While your crust is in the oven, sautee sliced onions in veg. oil in a large frying pan. Sautee until onions are getting soft, but still tender. Drain well on paper towels and then place into pie shell, arranging the onions evenly. In a small bowl, break eggs and whip well with milk (or half & half). Add salt, pepper and seasoned salt and mix well. Pour egg mixture over the onions and top with cheese.
- 3. Bake in a 350 degree oven for 45 to 50 minutes. Remove from oven and allow to cool about 15 minutes before serving. This is best served hot or very warm. Bon apetit' Y'all!
