TOASTED OATMEAL
Toasting the oatmeal before cooking it gives the cereal a nutty flavor.

Steps:
- Melt butter in a large heavy saucepan over medium heat. Add the oats, and toast, tossing and turning oats, until oatmeal is browned and fragrant, about 4 minutes. Add 4 cups water and salt, and bring to a boil. Reduce to a simmer, cover, and cook until most of the water has evaporated and the oatmeal is tender, about 30 minutes for the Irish oatmeal and 10 minutes for the old-fashioned rolled oats. Serve hot with the toppings of your choice.
LEFTOVER OATMEAL BREAD

- Combine the yeast, bread flour, 1/4 cup toasted, uncooked oats, and the salt in a small mixing bowl and set aside.
- Combine the leftover cooked oatmeal, warm water, agave syrup, and 1 tablespoon of oil in a large mixing bowl. Add the dry mixture to the cooked oatmeal mixture in 3 installments and mix thoroughly with a wooden spoon after each addition.
- Turn the dough onto a lightly floured surface, and knead by hand for 10 minutes, incorporating more flour, if needed. Dough will be sticky. Put the dough in a lightly oiled bowl or container. Cover with plastic wrap and set in a warm place to rise until the dough has doubled in size, about 1 hour.
- Punch down the dough, shape it into a loaf, and put it into a lightly oiled 9 by 5-inch loaf pan. Cover with plastic wrap and refrigerate overnight.
- Heat the oven to 350 degrees F.
- Combine the egg yolk and water in a small bowl. Lightly brush the top of the loaf with egg wash and sprinkle with remaining 1 tablespoon toasted, uncooked oats. Bake until the bread reaches an internal temperature registers 210 degrees F on an instant-read thermometer, about 55 minutes to 1 hour. Remove the loaf from the pan to a cooling rack for 30 minutes before slicing and serving.

- In a large mixing bowl (or the bowl of a standing mixer), add water and yeast. Let stand 3 to 5 minutes. Stir in the egg, molasses, and half of the flour mixture. Beat on medium speed for two minutes or by hand until smooth. Stop the mixer. Add the remaining flour mixture and beat (or stir) again until smooth, 1-2 minutes. Scrape down batter from sides of bowl. Cover and let rise in warm place until doubled, 30 to 40 minutes. To check if the dough is ready, press it lightly with two fingers; if the indentation remains, the dough is ready.
- Grease a 9x5-inch or an 8 1/2 x 4 1/2-inch loaf pan. With a wooden spoon or your hand, gently press down the dough in the bowl with repeated strokes (about 25 total). Spread the batter into the prepared pan (it will be thick and fairly sticky), then tap the pan on a counter several times to remove any air pockets. If using a 9x5-inch pan, let rise until the batter comes within 1 inch of the top of the pan; if using an 8 1/2 x 4 1/2, let rise just until batter reaches the top of the pan, about 30 minutes. Preheat your oven to 375 degrees F.
- Bake loaf for 40-50 minutes, until well browned on sides and top. The bread should reach an internal temperature of 190 degrees F and sound hollow when tapped. Remove from pan and let cool on a wire rack. Slice and serve.

- To make the overnight soaker: In a mixing bowl, combine the oats and water. Stir thoroughly, cover, and let sit overnight (8 to 12 hours) at room temperature.
- To make the dough: Weigh your flour; or measure it by gently spooning it into a cup, then sweeping off any excess. In a large bowl or the bowl of your stand mixer, combine the overnight soaker with the remaining dough ingredients. Mix and knead to make a soft, elastic dough; if the dough seems dry, knead in an additional 1 to 2 tablespoons (14g to 28g) water. If you're using a stand mixer with dough hook, the mixing/kneading process will take about 3 minutes on low speed followed by 5 to 6 minutes on medium speed.
- Transfer the dough to a lightly greased bowl and cover it with plastic wrap or a reusable cover. Let the dough rise for 1 hour.
