HEALTHY TURKEY LOAF

Whipped up this low fat number while on a diet/workout program. GREAT beef meatloaf substitute. My husband, the meatloaf lover, just LOVES this loaf and it is SO easy to mix up, freeze and bake later for a quick meal!

Healthy Turkey Loaf image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl combine the turkey, egg, salsa, red bell pepper, yellow bell pepper, onion, bread crumbs and lemon pepper. Mix well with hands until blended. Roll into a small loaf and place on a foil-lined baking sheet.
  • Bake in the preheated oven for 25 minutes.

Steps:

  • Heat oven to 350°F. In large bowl, mix all ingredients except 1/4 cup salsa. Press mixture into ungreased 9x5-inch loaf pan. Top with 1/4 cup salsa.
  • Bake 45 to 55 minutes or until meat thermometer inserted in center of loaf reads 160°F. Serve with additional salsa if desired.

Turkey Salsa Meatloaf image

Steps:

  • Heat oven to 350 degrees F.
  • Using your hands, combine all ingredients, except the ketchup, in a medium bowl until well mixed.
  • Spray a 8 1/2 x 4 1/2 x 2 1/2 loaf pan with cooking spray.
  • Pack the meatloaf mixture into the loaf pan. Drizzle ketchup over meatloaf.
  • Bake (uncovered) 1 hour and 15 minutes.
  • Let stand a few minutes before slicing and serving.

1 1/2 lbs ground turkey
3/4 cup oats (quick cooking or old fashioned, uncooked)
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 egg, slightly beaten
1 cup salsa (any salsa is OK, spicy or mild)
2 -3 tablespoons ketchup

Steps:

  • Combine bread and milk in a large bowl; let stand until liquid is absorbed. Add next 14 ingredients and 1/3 cup salsa; mix lightly but thoroughly., On an 18x7-in. piece of heavy-duty foil, shape meat mixture into a 10x6-in. oval loaf. Lifting with foil, transfer to a 6-qt. oval slow cooker. Press ends of foil up sides of slow cooker., Cook, covered, on low 3-4 hours or until a thermometer reads 165°. Lifting with foil, drain fat into slow cooker before removing meat loaf to a platter; top with remaining salsa and sprinkle with cilantro. Let stand 10 minutes before slicing. Serve with rice.

Turkey Meatloaf With Salsa image

Steps:

  • Heat oil in a medium skillet. Add celery and onion and cook until tender, about 10 minutes. Add garlic and cumin and cook for a minute, then set aside to cool slightly.
  • Preheat oven to 350 degrees F.
  • In large bowl, combine turkey, bread crumbs, milk, salsa, egg whites, salt and pepper, and celery and onion mix.
  • Spray a 13" x 9" pan with cooking spray, shape meatloaf into a 9" x 5" loaf and place in the middle of the pan.
  • In small bowl, combine ketchup and mustard. Spread mixture on top of meatloaf.
  • Bake at 350 degrees for about 1 hour, or until the inside is heated to 165 degrees F.
