TURKEY VEGETABLE CASSEROLE
I use a very thick slice of smoked or Cajun seasoned turkey from the deli for this recipe except after Thanksgiving when I use leftover roasted turkey. Steps:
- 1. Preheat oven to 350. Spray a 9x13 pan with cooking spray. Cook macaroni and drain. Cook vegetables with celery salt and onion powder. Drain when carrots are tender.
- 2. Combine Velveeta, soup and water in a microwave safe dish and microwave for about 4-6 minutes until the Velveeta is melted. Stir occasionally to mix.
- 3. In a large bowl combine all ingredients and stir until blended.
- 4. Pour into cooking spray coated 9x13 dish and bake for 20 minutes or until warmed through.

- Spoon stew into four 14- to 16-ounce casserole. Top with apple and, if desired, fresh sage. Drizzle with melted butter and sprinkle with nutmeg mixture. Bake uncovered, for 10 minutes or until bubbly and apple slices begin to brown.

- In a 12-inch skillet cook and stir mushrooms, sweet pepper, onion and garlic in hot butter or oil over medium heat until tender. Stir in flour, salt, thyme and black pepper. Slowly stir in milk; cook and stir until thickened and bubbly. Stir in spinach, rice, turkey and 1/4 cup of the Parmesan cheese.
- Spoon mixture into a 2-quart rectangular baking dish. Sprinkle with remaining Parmesan cheese. Bake, covered, in a 350 degrees F oven for 20 minutes. Uncover and bake about 10 minutes more or until heated through. Let stand 15 minutes before serving.
