EASY UPSIDE-DOWN PIZZA CASSEROLE
I can't recall where I got this recipe from, but it is a very simple casserole that is very good too! Your little ones will love it for sure!

Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Stir in sauce, mushrooms, and olives. Cook and stir until heated through, about 2 minutes more. Transfer mixture to a 2-quart rectangular baking dish. Sprinkle mozzarella cheese on top of the casserole.
- Flatten each biscuit with your hands and arrange on top of the cheese.
- Bake in the preheated oven until biscuits are golden, 15 to 17 minutes.

- Heat oven to 350°F. In 12-inch skillet, cook beef, onion and bell pepper over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
- Stir in pizza sauce, pepperoni and olives; heat until hot. Spoon into ungreased 13x9-inch (3-quart) glass baking dish.
- In medium bowl, stir Bisquick mix, milk and eggs until blended. Pour evenly over pepperoni mixture.
- Bake uncovered about 25 minutes or until crust is light brown. Sprinkle with cheese. Bake uncovered about 5 minutes longer or until cheese is melted.

- 1. In a saucepan, cook the sausage, onion and green pepper over medium heat until meat is no longer pink; drain.
- 2. Stir in 2 tablespoons flour, basil and fennel; mix well. Add tomato sauce. Bring to a boil; cook and stir for 2 minutes.
- 3. Transfer to a 9x13" casserole dish that has been lightly sprayed with cooking spray. Sprinkle/layer with mozzarella cheese.
- 4. Place the remaining flour in a mixing bowl. Beat in the eggs, milk, oil and salt until smooth; stir in Parmesan cheese. Pour over casserole.
