  • Heat a large dutch oven or nonstick pan over medium-low heat. Add oil and let it get hot, about 30 seconds. Add 1 tablespoon curry powder, ground turmeric, garlic, and ginger and toast the spices by stirring until fragrant and well combined, about 30 seconds. Careful not to let the garlic burn.
  • Add onion, sweet potato, salt and pepper, and 1/3 cup water. Mix well to combine. Cover with a lid, and cook for 5 minutes, stirring a few times to make sure it doesn’t burn. Add cauliflower and mix well, cover with a lid, and cook for another 2-3 minutes, stirring occasionally. If needed, add a splash of water if starting to stick.
  • Add peppers and mix well, cover with a lid, and cook for another 2-3 minutes. Add coconut milk, red curry paste, tomato paste, 1/2 tablespoon curry powder, cayenne, chickpeas, and salt and pepper. Stir to combine.
  • Let simmer from 5-10 minutes until vegetables are cooked to your preference. Curry will thicken as you simmer. Serve with toppings and enjoy!

Cook for another 30 seconds. Then, add 1 teaspoon of kosher salt, curry powder, coriander, and vegetable broth. Stir to combine the spices with the broth. Add the cauliflower and chickpeas.
  • Cover the pot with the lid and bring the broth to boil. Uncover the pot and add the coconut milk, stirring to combine. Reduce the heat to medium and let the broth simmer for another 5 to 7 minutes, until the cauliflower is fork tender.

  • Cut the cauliflower into medium-sized florets. Chop the potatoes into 3/4-inch chunks roughly. Place cauliflower and potatoes in a large soup pot and fill with cold water. Season the water heavily with salt. Bring to a rolling boil over the stove. Remove from the heat immediately, and drain gently into a colander. Place colander over the pot to stay warm while you prepare the remaining ingredients.
  • Heat the oil in a large, heavy pot Add the onions, garlic, and ginger, and saute, stirring every few minutes, for about 8 to 10 minutes, or until the onions are very soft and translucent. Adjust heat if necessary.
  • Add the ground coriander, cumin, cardamom, red pepper flakes, star anise, and salt and pepper, and cook, stirring frequently, for 2 to 3 minutes, or until very fragrant. Add the tomatoes with their juices and drained chickpeas, and stir mixture together. Add the cauliflower and potatoes. Add the vegetable broth (or water, if using)–the broth/water should almost reach the top of the vegetable mixture–and bring to a low simmer. Simmer mixture for 10 minutes, stirring occasionally, until the cauliflower and potatoes are fork tender.
  • Stir in the garam masala and coconut milk, simmer for an additional 10 minutes, and season to taste with salt and pepper. Don’t be afraid of salt–this dish needs heavy seasoning!
