VICKI'S LEFTOVER STEAK PANINI

When we have steak night at our house, there is so much to eat that we usually have leftover steak (ribeye or porterhouse). A couple of days later Vicki makes her cheese steak panini. Yummo ! Dinner for two:

Steps:

  • Heat panini grill or regular grill to medium heat.
  • Slice open the rolls lengthwise and set aside.
  • In a nonstick skillet, melt the butter with the oil and saute the vegetables while seasoning to taste until tender and set aside. Place 2 slices of cheese on one half of each roll followed by 4 oz. of the sliced steak. Place half of the vegetables on top of the meat followed by two more slices of cheese. Top with other half of roll.
  • Butter both sides of your sandwiches and grill until browned and cheese is starting to melt. Great with crispy fries.
  • Cooking time includes sauteing vegetables.

2 asiago cheese rolls (or your favorite sandwich rolls)
1/2 large yellow onion
4 ounces sliced mushrooms, drained
1/2 red bell pepper, sliced in 2 inch strips
1 tablespoon butter, plus more for grilling
1 tablespoon vegetable oil
8 ounces leftover steak or 8 ounces deli steak, sliced thin
4 slices havarti cheese (or a combination) or 4 slices monterey jack pepper cheese (or a combination)

garlic powder

VICKI'S SALMON RECIPE

I made this for our Christmas dinner party last year and everyone really loved it. I tend to cook by sight, so the measurements are all approximates. I used a whole side of a salmon and baked it for about 45 minutes.

Steps:

  • Line baking pan with foil. Spray with Pam Spray or brush with olive oil.
  • Place salmon fillets/steaks on foil. Sprinkle liberally with brown sugar.
  • Over the brown sugar, drizzle on a little bit of teriyaki (about ½ tablespoon).
  • Drizzle with olive oil (about 1 to 1 ½ tablespoons).
  • Spread on sweet and sour sauce - this also allows you to mix together the other ingredients you've already put on the fish.
  • Sprinkle with ginger and pepper. Loosely cover with foil.
  • Bake at 350 degrees until done, this depends on the amount and size of salmon you are using. I start checking it at 20 minutes, and continue checking every 10 minutes after that. The last 10 minutes or so, remove foil or you can make it without being covered with foil - just watch it closer.

If you like salmon and balsamic vinegar, then you'll love this dish. It's super quick and so easy to prepare. It's especially good with roasted vegetables and a mixed greens salad.

Salmon With Balsamic Vinegar Sauce image

Steps:

  • Stir together vinegar, water, lemon juice and brown sugar in a small bowl.
  • Pat salmon dry and season with salt and pepper.
  • Heat oil in a 12" nonstick skillet over moderately high heat but not smoking.
  • Increase heat to high, add salmon skin side up, and sear until well browned (about 4 minutes).
  • Turn fish over and sear until just cooked through (3 to 4 minutes more).
  • Transfer salmon to plates and carefully add vinegar mixture to skillet (liquid will bubble vigorously and steam.).
  • Simmer, stirring until thickened and reduced to about 1/3 cup (about 2 minutes).
  • Spoon glaze over salmon.

1 tablespoon packed dark brown sugar
1 teaspoon packed dark brown sugar

  • Make seasoning mix & season salmon. In small bowl, mix together the dry oregano, garlic powder and paprika. Season the flesh side of the fish with this spice mixture.
  • Sear the Salmon. In a large cast iron skillet, heat 2 tbsp extra virgin olive oil over medium-high heat until shimmering but not smoking. Reduce the heat to medium-low and add one salmon fillet, skin-side down, and press the top with the back of a fish spatula for about 10 seconds (this prevents the skin from curling up.) Add the remaining salmon fillets, one at a time, pressing each with the spatula for 10 seconds. Cook for about 4 minutes. If skin resists lifting (or if it’s sticking to the pan), allow the fish to cook for a little bit longer until you are able to lift up easily (no more than 6 minutes in total). Using the spatula and a fork to assist in flipping, flip the fish to the flesh side to cook for about 15 seconds or so. ( Salmon is ready when it registers 110°F (43°C) in the very center for rare, 120°F (49°C) for medium-rare, or 130°F (54°C) for medium, 5 to 7 minutes total.)
