Impossibly Easy French Apple Pie lovers! Here's a double-the-goodness recipe that will serve 15.

Steps:

  • Heat oven to 350°F. Spray 13x9-inch pan with cooking spray. In medium bowl, mix 1 cup Bisquick mix and the brown sugar. Cut in 1/4 cup butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until crumbly. Stir in nuts; set aside.
  • In large bowl, mix apples, cinnamon and nutmeg; spoon into pan. In medium bowl, stir remaining ingredients until well blended. Pour mixture over apples. Sprinkle with streusel.
  • Bake 45 to 55 minutes or until knife inserted in center comes out clean and top is golden brown. Cool 30 minutes or until set before cutting into squares. Store in refrigerator.

FRENCH APPLE TART

Looking for a showstopper dessert for a dinner party? If you have the time, it's well worth making a French apple tart, a classic shop-window patisserie.

Steps:

  • For the pastry, rub the butter into the flour, sugar and a pinch of salt in a bowl until crumbly. Mix in the egg until it forms a dough, then form into a puck shape. Cover and chill for at least 30 mins. Will keep chilled for two days.
  • Heat the oven to 200C/180C fan/ gas 6. Roll the pastry out on a lightly floured surface to roughly the thickness of a £1 coin, and use to line a 23cm fluted tart tin, leaving some overhanging. Line with a disc of baking parchment big enough to cover the edges, and fill with some baking beans to weigh it down (use dried rice or lentils if you don't have baking beans). Bake for 15 mins, then remove the parchment and beans and bake for 10-15 mins more until the pastry is biscuity. Trim away any overhanging pastry with a serrated knife. Set aside to cool.
  • Meanwhile, set aside four of the apples, then peel, core and roughly chop the rest. Put them in a shallow saucepan with 2 tbsp water, all but 1 tbsp of the sugar and the alcohol, if using. Cover and cook over a low heat for 25-30 mins, stirring occasionally and adding more water if needed, until the apples have collapsed into a purée. Taste the mixture and sweeten with more sugar, if needed.
  • Turn the oven up to 210C/190C fan/gas 8. Peel, core and halve the reserved apples, then cut into even-sized slices. Spread the apple purée over the base of the tart case, then arrange the apple slices in neat, concentric circles, starting from the outside. Brush the apples with butter, then scatter over the reserved sugar and bake for another 20-25 mins until golden.
  • Mix the jam with 1 tbsp hot water from a freshly boiled kettle. When the tart has finished baking, glaze generously with the jam, then leave to cool a little. Serve warm or cold, dusted with icing sugar, if you like.

I'd never heard of this dessert until I ate it in a small hotel at the foot of the French Pyrenees. I came back home and was able to find this recipe on the internet-- I believe a French cuisine website, but the name escapes me. Quick, easy, and yummy, too. Preparation time includes resting time.

Steps:

  • Sift flour, sugar and baking powder into a bowl.
  • Make a well in the center of mixture and add the eggs, milk and vanilla extract.
  • Mix in well to form a smooth batter.
  • Add 4 TBS of the melted butter.
  • Let batter stand for 30 minutes while preparing the fruit.
  • Pre-heat the oven to 450°F.
  • Butter an 8 inch round cake tin.
  • Stir the fruit into the batter and pour into the tin.
  • Bake for 30 minutes or until a toothpick inserted in the center comes out clean.
  • Cool in the tin for 5 minutes, then turn out onto a wire rack.
  • Serve warm, or cold.

  • Preheat the oven to 400°F. Place a large sheet of parchment paper over a baking sheet. Unroll your puff pastry sheet (or if you've made your own, roll it out on a lightly floured surface to 10 1/2" by 15 1/2”). Use a fork to pierce all over the puff pastry.
  • In a large bowl, very gently toss the apple slices with the lemon juice and brown sugar. Layer the apple slices on the puff pastry square however you prefer, diagonally or straight down. Just make sure you slightly overlap the apple slices.
  • Bake the tart for approximately 40 minutes, until the edges of the apples and puff pastry begin to brown. The apple juices that stream off the tart will burn quickly on the parchment paper - do not worry, this is OK.
  • Immediately loosen the tart from the pan using a metal spatula. Transfer the tart to your serving plate. Warm up the fig preserves in the microwave for about 30 seconds. Use a pastry brush to brush the fig preserves all over the tart. Enjoy warm or room temperature.
