SPINACH SALAD WITH WARM BACON DRESSING

Spinach Salad with Warm Bacon Dressing image

Steps:

  • Cook the bacon in a medium skillet over medium heat, stirring occasionally, until crisp, 9 to 11 minutes. Remove to paper towels; reserve the drippings in the skillet.
  • Whisk the vinegar, sugar, mustard and 1/4 teaspoon each salt and pepper into the drippings. Slowly whisk in the olive oil until emulsified.
  • Place the spinach in a large bowl and pour the warm dressing on top; add the grapes, blue cheese and the reserved bacon and toss. Season with salt and pepper. Top with croutons.

5 slices bacon, roughly chopped
1/4 cup white wine vinegar
1 teaspoon sugar or honey
1 teaspoon dijon mustard
Kosher salt and freshly ground pepper
2 tablespoons extra-virgin olive oil
1 pound spinach (not baby), tough stems removed
2 cups seedless red grapes, halved
4 ounces blue cheese, crumbled (about 3/4 cup)
Croutons, for topping

Steps:

  • In a skillet, cook bacon over medium heat until crisp, stirring occasionally. Using a slotted spoon, remove bacon to paper towels. Discard all but 1 tablespoon drippings., Add vinegar, garlic, brown sugar, mustard and seasonings to drippings; heat through, stirring to blend. Transfer to a small bowl; gradually whisk in oil. Stir in half of the bacon., Place spinach, onion and eggs in a large bowl; toss with warm dressing. Sprinkle with remaining bacon; serve immediately.

Warm Spinach salad with bacon and pine nuts image

Steps:

  • Heat 1 tbsp of oil in heavy frying pan over medium- high heat until hot, but not smoking.
  • Add the bacon and saute, stirring occasionally for 4 mins or until browned.
  • Reduce heat to a minimum, add pine nuts and cook for 1 min, stirring occasionally Add the garlic and cook, stirring for 30 seconds.
  • Add the spinach, vinegar and remaining tbsp of oil and cook, tossing gently for 15 seconds, or until the spinach is warm and a bit wilted.
  • Transfer to serving plates, sprinkle with parmesan and serve immediately.

2 tablespoons olive oil
4 slices streaky bacon, cut into 1 cm pieces
2 tablespoons pine nuts
2 cloves garlic, finely chopped
1 lb spinach leaves, trimmed,washed and spun dry

  • Slice the top off the cob loaf and scoop out the inside leaving a 2cm edge and break it the bread into bite sized pieces. Arrange the hollowed out loaf and pieces of bread on a large baking tray and drizzle with olive oil. Bake for 10 minutes at 180°C until starting to get crispy.
  • While the bread is toasting melt the butter in a medium sized pot over a medium heat. Add the spinach and garlic and cook for about 5 minutes until spinach has cooked down.
  • Add cream cheese, sour cream, grated cheese and mix together. Cook for 5 minutes or so until smooth and creamy. Add salt & pepper to taste. If you think the dip is too thick, thin it out with milk or cream.
