VENICE SUNSET COCKTAIL

Steps:

  • Thread 3 frozen cherries onto each skewer. Put in the freezer until ready to garnish the drinks.
  • Pour 2 tablespoons of grapefruit juice into each of 4 champagne flutes and top with the 1/4 cup of sparkling grape juice. Add 1/2 tablespoon of the reserved cherry sauce and garnish with the frozen cherry skewers.
  • For the adults, add 1-ounce of Amaretto liqueur.

12 frozen cherries
4 (6-inch) bamboo skewers
1/2 cup grapefruit juice
1/4 cup sparkling white grape juice
2 tablespoons reserved cherry sauce from Italian Donuts with Cherry Sauce, cooled
4 ounces Amaretto liqueur

We Miss You Elvis Cocktail image

Steps:

  • Finely chop half the peanuts and mix them with the sugar. Spread the mixture out onto a flat plate. On another plate, pour in a little of the vodka. Dip the rim of a martini glass into the vodka, then into the peanut and sugar mixture. Set aside while you make the cocktail.
  • Into a blender, add the banana, vanilla vodka and white chocolate liqueur. Blend until smooth. Pour into the prepared glass and serve.

2 tablespoons sugar
2 ounces vanilla vodka, such as Smirnoff, plus more for dipping
1 frozen banana
2 ounces white chocolate liqueur, such as Godiva

Steps:

  • For the peanut puree: Place the peanuts in 1/4 cup of peanut oil in a small saute pan and heat for 3 minutes at low heat. Transfer to a blender and puree until smooth.
  • For the bread: Mix eggs, vanilla and heavy cream together in a bowl. Dip banana bread into the mixture. Melt butter in a nonstick pan and cook banana bread for 2 minutes on each side or until golden brown. Place bread on a paper towel and reserve.
  • For the bananas: Cut bananas into quarters and dip into the same egg mixture as above, then roll the bananas in the bread crumbs until well covered. In a nonstick pan, heat 1/4 cup of peanut oil until nearly smoking and fry bananas until golden brown, remove from oil and place on a paper towel as well.
  • For assembly: Spread both sides of banana bread with peanut puree and layer with the fried bananas. Drizzle with 1 teaspoon of honey. Close the sandwich and slice.

  • Bake bananas in peel at 350 degrees F. for 30 minutes and allow to cool. In saucepan, cook peanut butter, 1 cup half-and-half, banana liqueur and egg substitute over low heat and whisking constantly for 7 minutes or until a thermometer registers 160 degrees F. Whisk in remaining 2 cups half-and-half, condensed milk and vanilla. Combine flour and sugar. Whisk into hot mixture until sugar dissolves. Chill mixture. Just prior to freezing, mash bananas with fork and stir into custard. Freeze in 4-quart freezer.

6 oz. reduced-fat or regular creamy peanut butter
2 tsp. vanilla extract
3 cups fat-free or regular half-and-half
2 T. banana liqueur
3/4 cup egg substitute or 3 whole eggs
3/4 cup sugar
14 oz. can fat-free or regular sweetened condensed milk
