CLASSIC MEATBALLS
This homemade meatball recipe is a Betty classic, and for great reason! For generations, home cooks have relied on this hearty meatball recipe to show some skills the kitchen. All it takes to achieve this meaty main dish is eight basic ingredients. Got them? Great! Now, if you have 15 minutes to spare and a foil-lined 13x9 pan, perfectly browned and tender meatballs could be the answer to tonight's dinner jam. Yes, delicious doesn't take long! In the meantime, prepare spaghetti or rice, veggies or salad, because this recipe goes with anything!

Steps:
- Heat oven to 400°F. Line 13x9-inch pan with foil; spray with cooking spray.
- In large bowl, mix all ingredients. Shape mixture into 24 (1 1/2-inch) meatballs. Place 1 inch apart in pan.
- Bake uncovered 18 to 22 minutes or until temperature reaches 160°F and no longer pink in center.

THE BEST MEATBALLS
I never knew how to make good meatballs until I found this recipe. I normally make mine with just ground beef and they still taste great. I've used the combination of pork, beef and veal and they are equally good. Definitely use fresh bread crumbs and freshly grate your cheese instead of using the canned variety...it really does make a difference.

Steps:
- Combine beef, veal, and pork in a large bowl. Add garlic, eggs, cheese, parsley, salt and pepper.
- Blend bread crumbs into meat mixture. Slowly add the water 1/2 cup at a time. The mixture should be very moist but still hold its shape if rolled into meatballs. (I usually use about 1 1/4 cups of water). Shape into meatballs.
- Heat olive oil in a large skillet. Fry meatballs in batches. When the meatball is very brown and slightly crisp remove from the heat and drain on a paper towel. (If your mixture is too wet, cover the meatballs while they are cooking so that they hold their shape better.)

VEGETARIAN MEATBALLS
No one ever knows these are vegetarian. These also make great cocktail meatballs in a slow cooker with sweet and sour, Asian, or barbecue sauce.

- Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet.
- Mix eggs, bread crumbs, walnuts, Cheddar cheese, onions, cottage cheese, oil, garlic, basil, and salt together in a bowl with your hands until thoroughly blended. The batter will be very stiff.
- Chill mixture in the refrigerator for 1 to 2 hours.
- Roll into 1-inch balls and place on the prepared baking sheet.
- Bake in the preheated oven for 8 minutes, turn meatballs, and continue to bake for another 8 minutes.

WESTERN MEATBALLS
This is an absolute favourite of mine and the rest of my family. My aunt had made them the first time I tried them and I was hooked. Whenever our family gets together for potluck suppers (lots of excellent cooks!), we all hope that someone has made them. The recipe does make a lot.

- MEATBALLS: Combine all ingredients, roll into 1 1/2-inch balls, place on cookie sheet and bake in 350 degree F oven for about 20 minutes or until cooked through. Transfer from cookie sheet to a casserole dish or small roaster. (Also works very well in a slow cooker.).
- SAUCE: Combine all ingredients. Boil to thicken. Pour over meatballs and bake at 325 degrees F for approximately one hour. (If using slow cooker, just pour sauce over meatballs without boiling and cook for 4-6 hours on low.).
- NOTE: Can also use moose burger, one pound ground beef and one pound ground pork, one pound moose burger and one pound ground pork -- you get the idea. Very versatile.

WESTERN MEATBALLS
Found these at a church pot-luck and begged for the recipe. I served these at our Superbowl party and they were the first thing to go. You can make them smaller and stick a toothpick in as an appetizer. They are delicious and easy to make. Always a hit!

- Brown in HOT pan until dark brown.

- To make meatballs: Combine meat, eggs, milk, breadcrumbs and seasonings. Shape into bite-size balls and set aside. Over very low heat, saute garlic in butter until pieces are tender but not browned. Discard garlic. Brown meatballs on all sides and add to to Western BBQ Sauce. Simmer until thickened about 1 1/2 hours. Serve hot. Makes about 60 meatballs.
- To make Western BBQ Sauce: Saute onion in butter. Dissolve OXO Beef Cube in boiling water; stir into the onion. Add ketchup and remaining ingredients. Cover and simmer for 20 minutes. Add the meatballs and continue to simmer as noted. Serve on a bed of rice or with a tossed salad. I welcome any comments.
