Classic Alfredo Sauce image

Steps:

  • Melt butter or margarine in a saucepan over medium heat. Add heavy cream, stirring constantly. Stir in salt, nutmeg, grated Parmesan cheese, and grated Romano cheese. Stir constantly until melted, then mix in egg yolk. Simmer over medium low heat for 3 to 5 minutes. Garnish with additional grated Parmesan cheese, if desired.

ALFREDO SAUCE

Rich and creamy! I have found that Parmesan cheese doesn't melt well, and often substitute Gruyere cheese.

Steps:

  • Melt butter in a medium saucepan over medium low heat. Add cream and simmer for 5 minutes, then add garlic and cheese and whisk quickly, heating through. Stir in parsley and serve.

WHAT'S ALFREDO SAUCE?

I call it that because my in-laws have never had alfredo sauce until one night when I made it for them. I was totally shocked and told them they just had to try it and they were all very happy that they did. This is a great alfredo sauce that's packed with loads of flavor.

What's Alfredo Sauce? image

Steps:

  • In a medium-sized pot, melt butter over medium heat. Once butter melts, add in garlic and cream cheese and stir frequently until melted.
  • Ove melted, add in half-and-half and parmesan. Bring to a low boil, then turn down heat and simmer for 15 minutes. Add the nature's seasoning last to taste. This is usually about 2 tbsp for us, but we have sometimes added more.
  • Serve over pasta, veggies, whatever. Goes great as a dipping sauce for garlic bread too.

1/2 pint half-and-half
1/2 cup butter (I like to use sweet cream butter)
2 tablespoons cream cheese (heaping tbsps)
1 1/2 cups parmesan cheese
2 tablespoons Morton nature seasons seasoning blend
1 minced fresh garlic clove (can use two if you like a more robust garlic flavor)

Steps:

  • In a large saucepan, heat butter over medium heat. Add shallots; cook and stir until tender, 2-3 minutes. Add garlic; cook 1 minute longer. Add cream; cook and stir until heated through. Stir in Asiago, 1/2 cup Parmesan, Romano cheese, salt and pepper; bring to a boil, stirring constantly. Reduce heat; simmer, uncovered, until thickened, about 10 minutes, whisking occasionally., Meanwhile, cook pasta according to package directions. Drain, reserving 1 cup pasta water; place pasta in a large bowl. Add sauce; toss to coat. Thin as desired with reserved pasta water. Serve with the remaining 1/2 cup Parmesan cheese.
