WHEAT CRACKERS
This thin wheat cracker is simple and thrifty to make. It will taste great with almost any dip or spread, and they will have much more character than factory made crackers.

- Preheat the oven to 350 degrees F (175 degrees C).
- In a medium bowl, stir together the whole wheat flour, all-purpose flour, and 3/4 teaspoon salt. Pour in the vegetable oil and water; mix until just blended.
- On a lightly floured surface, roll out the dough as thin as possible - no thicker than 1/8 inch. Place dough on an ungreased baking sheet, and mark squares out with a knife, but don't cut through. Prick each cracker with a fork a few times, and sprinkle with salt.
- Bake for 15 to 20 minutes in the preheated oven, or until crisp and light brown. Baking time may be different depending on how thin your crackers are. When cool, remove from baking sheet, and separate into individual crackers.

WHEAT THINS STYLE CRACKERS
Posting here so that I don't lose it again. :o I made these years ago when the kids were younger but I can't remember what the yield was, where I got the recipe or whose recipe it was. I'm going to make them again later in the week. I'll get the correct prep time info and yield then but memory fails me now. :o . Perhaps someone out there in Zaar knows who should get the credit for this recipe and wouldn't mind posting that information? It would be much appreciated.

- Preheat oven to 350 degrees.
- In a large mixing bowl thoroughly combine both flours.
- In a separate bowl whisk together the oil, salt and water.
- Add liquid mixture to the dry mixture, mixing only enough to completely incorporate. Do not over mix!
- On a length of parchment paper that will fit your cookie sheet roll mixture to a rectangle no more than 1/8" thick - the thinner the better - as uniform as possible. Work fairly quickly but don't overwork. Dust rolling pin lightly with flour as needed to keep from sticking if necessary during the rolling process.
- Carefully slide parchment paper and contents onto cookie sheet.
- Gently score mixture with a sharp knife at the desired cracker size but do not cut through!
- Prick each cracker section two or three times with a fork to allow steam to escape.
- Sprinkle lightly with salt or other favorite cracker seasoning mix, if desired.
- Bake at 350 degrees for about 30 minutes or until crackers are crisp and light brown.
- Cool completely. Separate into individual crackers.
- Store in air-tight containers in a cool, dry place.

- Combine flour, sugar, salt and paprika in a food processor; pulse to mix. Add butter and pulse 6 to 8 times, until mixture resembles coarse meal, Combine the water and vanilla in a small measuring cup. Add to the butter/flour mixture and pulse until a smooth dough forms.
- Divide the dough into 6 pieces. Work with one piece at a time, keeping the others covered with a towel so they don't dry out. Lightly flour your work surface and rolling pin and roll the dough into a rectangle 3 inches wide and 1/4 inch thick. Set the pasta machine to its widest setting. Sprinkle with flour and feed it into the pasta roller.
- Turn the pasta roller down one notch. Sprinkle the dough with flour and roll it again. Repeat this process until the crackers are as thin as you want. (I thought the #3 setting was the thickness of a Wheat Thin.) If you want all of your crackers to be perfect, trim the edges of the dough so you have a rectangle with even sides.

- Mix ‘em: Combine the whole wheat flour, sugar, salt and paprika in a medium bowl. Using a pastry blender or two knives, cut the butter thoroughly into the dry mixture until it looks like large crumbs, no bigger than a pea. Some people use a food processor to cut in the fat, but I prefer to save dishes and keep it all in one bowl. Combine the water and vanilla in a measuring cup, plus honey if using, and add to the flour mixture. Mix well until combined and dough forms, but only as long as necessary for the most tender crackers.
- Prep ‘em: Use parchment paper, a lightly greased cookie sheet, or an ungreased baking stone. For crackers, I would HIGHLY recommend using a baking stone (I love my Pampered Chef Rectangular Stone), or at least parchment paper or a Nonstick Silicone Baking Mat. I roll the dough right out on the stone or mat, after flouring it lightly, and bake them. Yep, right on the stone. That way I don’t have to worry about rumpled crackers as I move the fragile dough. People say, “Those are homeMADE?” because most of my crackers have perfect shape and are sooooo delectably thin.
- Roll ‘em: Only use one fourth of the dough at a time. Cover all your surfaces with flour and roll the dough as evenly as you can. You might flip the dough to make it easier to roll, but I don’t always have to. Keep rolling until the dough is as thin as humanly possible without tearing. Use a pizza cutter or sharp knife and cut the dough into squares or triangles, about 1 1/2 inches each. Fork pokes make them look extra authentic. If you want all beautifully square crackers, you can trim the edges square. I skip the trimming and just deal with weird shaped crackers. Those go to the toddler right away! (Note: be sure you don’t cut your silicone mat!)
- Bake ‘em: Make sure your oven is preheated to 400 F. If you have used a mat or parchment paper, just slide it onto a cookie sheet. If you don’t have either, you’ll have to move each cracker individually. Sprinkle the squares lightly with real salt. Repeat with the remaining pieces of dough.
