THE NEELY'S VEGETARIAN CHILI

Gina says every once in a while, she and the girls go on a little veggie kick to take a break from eating meat. This is a hearty, spicy chili that is so satisfying that even Pat, her husband loves it! Serve with some yummy cornbread! From Down Home with the Neely's cookbook.

The Neely's Vegetarian Chili image

Steps:

  • Heat the olive oil iin a large pot over medium high heat. Add onions, carrots, bell pepper, and jalapenos. Saute until the vegetables are almost tender, about 8 minutes.
  • Add the tomatoes, stock or water, beans, bulgur, garlic, chile powder, chipotle pepper, cumin, coriander, cinnamon, and vinegar; bring to a boil.
  • Reduce heat to low, and cook uncovered, stirring occasionally, until the bulgur is tender and the mixture thickens, about 20 minutes.
  • Ladle the chili into bowls and garnish with sour cream, grated cheese, and cilantro. Enjoy!

3 tablespoons olive oil
1 onion, chopped
2 carrots, peeled, thinly sliced
1 red bell pepper, seeded and chopped
3 large jalapenos, seeded and minced (about 4 1/2 tbls.)
2 (28 ounce) cans diced fire roasted tomatoes with juice
2 cups vegetable stock (or water)
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can chickpeas, drained (also called garbanzo beans)
1/2 cup bulgur (cracked wheat)
3 garlic cloves, minced
2 tablespoons dried ancho chile powder (or regular chile powder)
1 tablespoon ground dried chipotle pepper (or 1-2 tsp. chipotle in adobo sauce, pureed)
2 teaspoons ground cumin
1 1/2 teaspoons ground coriander
1/2 teaspoon ground cinnamon
2 tablespoons red wine vinegar
sour cream, for garnish
grated cheddar cheese, for garnish
chopped fresh cilantro, for garnish

Spicy Vegetarian Chili image

Steps:

  • In a large pot heat olive oil. Add onion and peppers (for extra leave ribs and seeds in the habanero and jalapenos). Sauté for 10 minutes. Add water, black beans. kidney beans, tomatoes, bouillon cube, bay leaves, chili powder, cumin, smoked paprika, cayenne, liquid smoke, and salt and pepper. Bring to a boil reduce heat and simmer for 10 minutes. Add 1/2 can beer (drink the rest if you are over 21), boca meat, and corn. Cover and simmer for 30-45 minutes.
  • Top with cheddar cheese and sour cream.
  • Optional: Serve over rice.

4 cups water
2 vegetable bouillon cubes
0.5 (8 ounce) can beer
2 tablespoons olive oil
3 bay leaves
3 tablespoons chili powder
2 tablespoons cumin
2 tablespoons smoked paprika
2 teaspoons cayenne
2 teaspoons liquid smoke
salt and pepper
cheddar cheese
sour cream

Daphne's Veggie Chili image

Steps:

  • In a large heavy pot, heat the oil over medium high heat.
  • Add the onion and garlic, and saute until translucent.
  • Add the zucchini and corn, and saute for 5 minutes, stirring occasionally.
  • Add the tomato paste and chopped tomatoes with the juice from the can. Then add the salt, pepper, herbs,and spices.
  • Add 1-2 chopped chipotle peppers and the beans.Stir well.
  • Add the beer(or broth) and the vegetable stock until liquid covers all ingredients in the pot.
  • Bring to a boil, and then reduce heat to medium low. Simmer for 1/2 hour, stirring occasionally. Remove from heat, and adjust seasonings to taste.
  • Serve with shredded cheese, chopped avoacado, fresh lime juice and sour cream.
  • Enjoy!
