WILD YEAST (SOURDOUGH) BISCUITS
Cowboy style! There's proably no food in the old west that was more written about, talked about, and loved than sourdough biscuits. This recipe comes from The Old West Baking Book. Steps:
- Night Before:.
- Mix together the sponge ingredients, stirring well in a nonmetal bowl.
- Cover with plastic wrap (I place a shower cap over my bowl) and set aside until mix is bubbly, about 12 hours.
- To Make Biscuits:.
- Melt butter and stir in sugar until well blended.
- Add all remaining ingredients to the sponge and knead the dough for about 10 minutes until elastic or until bounces back when poked.
- Let rise in a warm spot until double in bulk.
- Punch down dough, knead lightly a few times to get the remaining gass out.
- Pat out the dough until 1/2 inch thick and cut out biscuits with a biscuit cutter.
- Place on a well-greased cookie sheet and let rise again until double in bulk.
- Preheat oven to 400 degrees.
- Bake for 15 minutes or until the tops are golden brown.

Steps:
- Measure sourdough starter into mixing bowl.
- Add sugar.
- Dissolve yeast in warm water.
- Add to starter.
- Cut shortening into mixture of salt, baking powder, and flour until it resembles coarse cornmeal.
- Add to starter mixture, stirring well with a fork.
- Turn out onto lightly floured surface and knead gently, adding more flour if necessary.
- Roll dough out to about 1/2 inch thickness and cut with biscuit cutter.
- Dip in melted butter and place in a greased cake pan with edges touching.
- Cover with a cloth or plastic and set in a warm place to rise for 45 minutes to 1 hour.
- Bake at 400 degrees F for 20 to 25 minutes or until golden brown.

- To make the biscuit dough using a food processor: Using the dough blade, pulse together the flour, baking powder, and salt. Add the cold butter and pulse briefly and repeatedly until fairly well combined but with some small chunks of butter remaining; this happens pretty quickly, so watch carefully.
- To shape the biscuits: Transfer the dough to a greased piece of parchment or waxed paper, or other greased work surface.
- Knead it gently several times to smooth it out. Fold it in thirds like a letter, then pat it into a rough 4” x 8” rectangle; it should be a scant 3/4" thick.
- Flip the rectangle over so the smoother side is on top. Cut eight square biscuits, or use a 2” biscuit cutter to cut rounds, patting together the scraps as necessary to cut additional biscuits.
- Wrap the biscuits in the parchment or waxed paper and place them in the freezer while the oven finishes preheating.
- To bake the biscuits: Remove the hot skillet from the oven. Unwrap the biscuits and arrange them in the skillet (or on the baking sheet). Place the skillet or pan on the oven’s upper rack.
