CREAMY MEXICAN SALSA
I don't recall the history of this salsa recipe. But it's one of those childhood moments in which I have specific memories of this spread or dip always being included on the buffet table at the parties my mom and dad hosted in our home. There was never any left, and everyone seemed to enjoy it. It's great with tortilla chips, dry crackers (especially a zesty herb cracker), fresh vegetables and deli snack breads.

Steps:
- In a medium size bowl, mixall of the ingredients together until the mixture is smooth and the ingredients are well blended.
- Cover the bowl, and chill until ready to serve.
- Serve with crisp tortilla chips, dry herbed crackers, fresh sliced vegetables, or an assortment of deli snack breads.

Steps:
- Preheat oven to 350ºF.
- Coat a large baking sheet with cooking spray.
- Heat oil in a small skillet over medium-high heat.
- Add beef and cook until meat is browned, breaking up meat as it cooks, about 5 minutes.
- Drain meat.
- Add cheese, chilies, chili powder and cumin and cook until cheese melts, stirring frequently, about 1 minute.
- Place wonton wrappers on a flat surface. Drop meat mixture by teaspoonfuls onto center of each wrapper.
- Moisten edges of wrapper with wet fingers, fold over to cover filling, press down firmly to seal and then gently twist ends to form a "firecracker" shape.
- Transfer filled wrappers to prepared baking sheet and coat surface with cooking spray.
- Bake until wontons are golden brown, about 15 minutes.
- Serve with prepared salsa.
- 5 Points Yields 5 wontons and 2 tablespoons of salsa per serving.

Steps:
- Preheat oven to 350°F.
- Cook pasta according to package directions without added fat or salt; drain and set aside.
- Meanwhile, heat oil in a medium saucepan over medium heat; add garlic and sauté 2 minutes.
- Add beef and cook until browned, breaking up the meat as it cooks, about 3 to 5 minutes; drain off any fat and return pan to heat.
- Add oregano, thyme, rosemary, salt and pepper; stir to coat beef.
- Cook until herbs become fragrant, about 2 minutes.
- Add tomatoes and bring mixture to a boil; reduce heat and simmer for 5 minutes.
- Spoon a small amount of tomato mixture into the bottom of a 4-quart casserole dish (just enough to cover the surface).
- Top with half of the cooked ziti and then layer with half of the remaining tomato sauce and half of the mozzarella cheese. Layer remaining ziti on top and top with remaining sauce and mozzarella cheese.
- Bake until cheese is golden and bubbly, about 30 minutes.
- 5 Points yields about 1 cup per serving.

- To make the vinaigrette: puree salsa, onion, cilantro, lime juice, vinegar, mustard, and salt in blender.
- Transfer to a bowl and set aside.
- Sprinkle both side of chicken with cajn seasoning.
- Heat medium skillet over med-high heat.
- Add oil, then add chicken and cook until lightly browned and just cooked through, about 4 minute on each side.
- Transfer the chicken to cutting board.
- Let stand 5 min, then slice into 1/2-inch thick strips.
- Place the salad greens and bell peppers in a large bowl.
- Top with the chicken strips, tomato, and avocado.
- Serve with salsa vinaigrette.
- 5 POints for 1-1/2 cups salad with 1/3 cup vinaigrette.

- Place 1 to 2 teaspoons of shredded cheese into the center of each wonton skin. Fold the top and bottom corners in toward each other and roll it up like a little egg roll. You will have to seal the wonton with a little water where the ends meet.
- Heat oil in a deep pot to 365 degrees F (180 degrees C). Fry the wontons two or three at a time. Drain on paper towels. Serve immediately.

RESTAURANT STYLE MEXICAN SALSA
I found this on another web site, its more like the dipping sauce they give you with the chips while you are waiting on your food to arrive. It has a good flavor and you can make it as hot as you want. It is better after it has been in the fridge for a day. Enjoy!!
