AUNT PATSI'S EASY PEACH JAM

I got this recipe from my great-aunt and tried it the first time on some fresh summer peaches. It was super easy and super yummy. It also works with frozen fruit. Store in a cool, dark place.

Aunt Patsi's Easy Peach Jam image

Steps:

  • Heat five 12-ounce jars in simmering water until ready for use. Wash lids and rings in warm soapy water.
  • Fill a large pot with water; bring to a boil. Add peaches; cook until skin loosens, about 20 seconds. Drain and cool until easily handled. Peel, pit, and cut the peaches into chunks.
  • Measure out 5 cups of peach chunks into the pot. Mash with a potato masher. Add sugar, peach gelatin, lemon juice, and almond extract; mix well. Bring to a rolling boil and cook jam for 1 minute. Remove from heat.
  • Pack jam into hot jars, filling to within 1/4 inch of the top. Wipe rims with a clean, damp cloth. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower in jars using a holder, placing them 2 inches apart. Pour in more boiling water to cover the jars by at least 1 inch. Bring the water to a rolling boil, cover the pot, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool, about 12 hours. Press the top of each lid with a finger, ensuring that lid does not move up or down and seal is tight.

Spiked Peach Jam with Ginger image

Steps:

  • Place peaches in a glass or plastic container with a lid and immediately mix with lemon juice to prevent browning. Stir in sugar and ginger. Cover and marinate in a cool place, 8 hours to overnight.
  • Inspect 5 half-pint jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until jam is ready. Wash new, unused lids and rings in warm soapy water.
  • Transfer peaches and all accumulated liquid to a large pot. Stir in pectin and slowly bring mixture to a full rolling boil that does not stop bubbling when stirred. Cook for 1 minute, stirring constantly.
  • Remove from heat and stir in amaretto liqueur, adding more to taste.
  • Ladle peach jam into the prepared jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any spills. Top with lids and tightly screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.

I was amazed that there were no recipes on zaar for jams that you can make in your bread machine! This is from my bread machine manual. Only for if you have a jam program on your bread machine! I just tried this out today because I am going to make an assortment of jams for Christmas gifts, and it was quite good. I would recommend using no more than the amount of spices listed - it is very strong. Also, I read that you should only use low-sugar pectin recipes in the bread machine. I didn't cut up the peach slices in the first batch I made, so in the second, I cut them up pretty small because the agitator doesn't do much to chop them up, like they normally would if you were stirring it constantly in a pot.

Steps:

  • Attach kneading blade in the bread pan.
  • Place ingredients into the bread pan in the following order: sugar, pectin, peaches, cloves, nutmeg, and lemon juice.
  • Place bread pan in bread machine and close lid.
  • Plug bread machine in and select "jam" program.
  • Press start.
  • When jam cycle is complete, open lid and using oven mitts, take pan out of bread maker - BE CAREFUL! IT'S VERY HOT!

Southern Comfort Spiked, Spiced, Peach Jam image

Steps:

  • In a large bowl pr the saucepan sprinkle peaches with brown sugar and lemon juice and let sit while gathering all ingredients.
  • In a large heavy bottom saucepan combine peaches, lemon juice, pectin, cinnamon, cardamom, and nutmeg. Cook over high heat stirring frequently to prevent scorching about 10-15 minutes or until full rolling boil.
  • (OPTIONAL) Use a submersion blander if small pieces are desire.Avoiding the cinnamon sticks.
  • Stir in white sugar.
  • Return to a full rolling boil. Boil hard for (3) minutes stirring constantly.
  • Remove from heat and add Southern Comfort and vanilla extract. Remove cinnamon stick.
  • Skim off foam. Ladle in hot sterilized jars, wipe rims and place lids and screw top on.
  • Place in a hot water bath covering by 1 inch of water.
  • Process in boiling bath 10 minutes. Shut heat off and let sit in water bath 5 more minutes. Then remove the jars from the hot water without tilting and set aside to cool.
  • Leave for 12 hours then check the seals on the jars by pressing on the centers of the lids. If the lids do not spring back, they are vacuum sealed and the jam can be stored at room temperature. Another way to check is to remove the ring and try to lift the lid.
  • If it lifts up, it wasn't sealed properly.
  • If the lid flexes, there is no seal, so store the jar in the freezer or refrigerator instead.

Blueberry Cherry Lime Jam (Bread Machine) image

Steps:

  • Wash your berries and pit your cherries! Hey, that rhymes!
  • I use organic dried cane sugar or sucanat for my sweetener, but regular sugar will do fine too.
  • Wash your lime and roll it under your hand on the counter top to help it release more juice. You can also put it in the microwave for about 30 seconds or so, then roll it.
  • Juice the lime. Sure you can use juice from a bottle, but fresh makes a difference. Plus you get real lime zest. Lime zest is hard to find in the spice section, at least around here.
  • Zest the lime until you get at least a teaspoon. I also added a few thin strips of lime peel (try not to get much pith -the white part-) because I love candied citrus peel.
  • Put into your pan in order, sugar, pectin, berries, then lime. The breadmaker commandments say it matters. I didn't do it that way because I am a rebel and it turned out fine.
  • Put your bowl into the breadmaker. Turn it to the jam setting. Let her rip! Check it at about 5 minutes in then maybe 5 minutes later, just to make sure nothing is sticking to the side. Other than that, it's like magic and does it without your input.
  • Go for a run, watch an episode of your favorite TV drama, or chill for about 90 minutes.
  • When your jam is done, open the bread machine and let it cool for quite awhile because hot fruit burns are NASTY!

Steps:

  • Place all ingredients in a heavy large pot; stir to combine. Bring to a rolling boil over medium-high heat. Boil, stirring occasionally, 15 minutes, adjusting heat as necessary to maintain an even boil.

When jam begins to thicken slightly, place a small amount of jam on chilled plate; return to freezer for 1 to 2 minutes (remove jam from heat during testing time). When set, jam will be slightly set and will not run on plate. If jam is too liquid, cook an addition 1 to 2 minutes before testing again.
