SHREDDED ROAST DUCK

Some say roasting a duck is difficult work. It is not. It can be messy, though, so make sure you have a roasting pan that can accommodate the enormous amount that renders out of the bird during its roughly four and a half hours in the oven. (Save it for roasting potatoes!) When the meat has cooked, use a couple of forks to shred it, then moisten it with your favorite barbecue sauce, hoisin sauce, gochujang sauce or gravy, and serve with rice or noodles, on potato rolls or Chinese wheat-flour pancakes, or as the final topping of this maniacal recipe for scallops with hollandaise sauce and shredded duck.

Shredded Roast Duck image

Steps:

  • Heat oven to 325. Remove giblets and neck from duck cavity, and discard or reserve for another use. Cut off excess fat from duck cavity. Place duck on a rack in a deep roasting pan, breast-side up, and season with salt and pepper. Then slide the pan into the oven and cook, undisturbed, for 2 hours.
  • Remove duck from oven, and use the point of a sharp knife to prick the skin of the bird, all over the breasts and thighs. Return bird to oven, and cook for 1 to 2 more hours, or until an instant-read thermometer inserted into the thigh measures around 155 degrees.
  • Increase oven temperature to 450, and cook until the duck is golden and crisp, 15 to 30 minutes.
  • Carefully remove the roasting pan from the oven, and transfer the duck to a cutting board. (Let the fat in the pan cool, then store it, covered, in the refrigerator. It is an excellent medium for roasting potatoes.) Allow the duck to rest for a few minutes, then shred it, using two forks to pull the meat apart. Add your favorite barbecue sauce, to taste, or your favorite hoisin sauce, to taste. Keep warm.

_CHICKEN, COOKED: TO CUT UP

Steps:

  • With a sharp cleaver, remove the legs and wings at their joints. Chop each thigh, bones and all, in 2 pieces each drumstick in 2 pieces. Cut off the lower or bony part of each drumstick. Chop each wing in 2 or 3 pieces. Chop the neck in 3 pieces. Split the bird lengthwise down the spine and through the breast. Remove each half of the breast, cutting it first into quarters, then into slices about 1 inch thick (bones and all). Chop the upper and lower back in 3 pieces each. Lay these down on the serving dish. Then place the neck, wing and leg sections, skin-side up, approximately back in their original positions. Finally, place the slices of breast meat down the middle in 2 neat rows to reconstruct the natural shape of the chicken. (An easy way to do this: as the chicken is chopped, section by section, scoop up the pieces with the broad cleaver-knife blade and slide them directly onto the serving platter.)The Thousand Recipe Chinese Cookbook. ©1994 by Gloria Bley Miller.

STEAMED DEEP-FRIED PRESSED DUCK

Steamed Deep-Fried Pressed Duck image

  • 1. Blanch, toast and sliver almonds. 2. Wipe duck inside and out with a damp cloth. Combine soy sauce, salt and sugar and rub over duck skin. Pour remainder into duck cavity, swishing it around to coat the interior. Drain off excess and discard. 3. Put duck in a deep heatproof bowl. Cut celery in 3 or 4 pieces trim off scallion roots and arrange over duck. Steam 2 hours by the bowl-in-a-pot method (see HOW-TO, _Steaming). 4. Drain duck, reserving liquid for stock. Let bird cool slightly then bone, leaving skin and original shape intact (see HOW-TO, _Duck: To bone). Transfer duck to a large flat plate or cutting board. 5. With both hands, press down on duck, flattening it to a 3/4-inch thickness. Then sprinkle generously on both sides with cornstarch. Return bird to heatproof bowl and steam 30 minutes more. Let cool, then cut in quarters. 6. Heat oil to boiling. Add duck, one quarter at a time, and deep-fry until golden. Drain on paper toweling. Let cool slightly then cut bird in 1 1/2-inch squares, each with some skin. Keep warm. 7. In a saucepan, combine sugar, vinegar, catsup, hot sauce and remaining soy sauce and salt. Bring to a boil, stirring. Meanwhile blend remaining cornstarch and cold water to a paste, then stir in to thicken. 8. Shred lettuce and arrange on a serving platter with duck squares on top. EASY ROAST DUCK

Duck is so difficult to roast badly that all experienced cooks seem to claim their procedure is the best. Having tried many methods, I can say that the results are all about the same. So I chose the one presented here, which is the easiest way to guarantee a succulent but beautifully browned bird.

Easy Roast Duck image

Steps:

  • Preheat oven to 450 degrees. Remove giblets and neck from duck cavity and discard or reserve for another use. Cut off excess fat from duck cavity.
  • Place duck, breast side down (wings up), on a rack in a roasting pan; add water to come just below the rack. Sprinkle duck with pepper and brush with a little soy sauce.
  • Roast 30 minutes, undisturbed. Prick the back all over with point of a sharp knife, then flip bird onto its back. Sprinkle with pepper and brush with soy sauce again. Add a little more water to the pan if the juices are spattering (carefully--you don't want to get water on the duck).
  • Roast 20 minutes, then prick the breast all over , and brush with soy sauce. Roast 10 minutes; brush with soy sauce. Roast 5 or 10 minutes more if necessary, or until duck is a glorious brown all over and an instant-read thermometer inserted into the thigh measures at least 155 degrees. Let rest 5 minutes before carving and serving.

  • Cut off the legs at the thigh joints, the wings at the shoulder joints. Split duck in half along the backbone. Carefully separate breast meat from bone, using a cutting and tearing action. Cut breast meat in 2-inch strips. With a cleaver, chop legs and upper wings in 2-inch sections. To serve: Place neck on platter. Steps:

  • Use a heavy tissue, rice paper, parchment-type, or wax paper. Do not use aluminum foil. (The wrapping must be porous.) Cut the paper in 4-inch squares. Place each square with the lower corner pointing toward you. Grease paper with a drop of oil (peanut or sesame, lard or chicken fat). Place the meat or chicken well below the center line of the square. Fold up the lower corner to cover the meat. Then fold the lower section once more (to the center line). Next, fold the left corner over and the right, envelope-style. Finally, fold the remaining top corner down, like an envelope flap, and tuck its end in securely. Repeat until all meat or chicken is paper-wrapped.NOTE: Paper-wrapping, used with deep-fried foods, acts much like a batter coating in insulating ingredients against the hot oil. (If the meat is cut in narrow strips, 2 pieces may be enclosed in each wrapping.
