A 15 MINUTE GARLIC KING PRAWN SALAD

This dish is a speedy, low carb, low calorie dish I created one evening, after a very long day at work. It was light but full filling in flavour and perfect for a quick healthy dinner.

A 15 Minute Garlic King Prawn Salad image

Steps:

  • Sprinkle the oregano on to the halloumi cubes and set aside.
  • Heat the butter in a pan on a medium to high heat with a dash of olive oil. Once the butter has melted add the garlic, prawns and parsley.
  • Continuously mix the prawns to they cook evenly and do not burn (2 minutes), and as they turn pink add the halloumi along with the black pepper.
  • Cook for another 2 to 3 minutes until the halloumi browns and the prawns are cooked through out. Once done, remove for the heat and squeeze the lime over them.
  • Layer the base of your salad with the green leaves and top with the prawns and halloumi poured all over them.

150 g king prawns, shelled
50 g halloumi cheese, cut into cubes
1 pinch oregano
1/2 teaspoon butter
1 dash extra virgin olive oil
1 garlic clove, crushed
1/2 teaspoon dried parsley (I have used dried for speed but fresh is better)
1/2 lime, juiced
black pepper, to season
30 g watercress
30 g rocket

Grilled King Prawns With Lemon, Garlic And Chilli image

Steps:

  • Remove prawn heads and cut away the legs, then slit the backs of the prawns lengthwise with a sharp knife.
  • Devein, then place the prawns in a bowl.
  • Add the remaining ingredients and mix to combine.
  • Set aside for one hour to marinate.
  • Preheat BBQ or grill to high, add prawns to the flat plate (or if using the grill place prawns on a flat heat proof tray) and cook for 5 minutes, adding some marinade, until cooked.
  • Serve with lime wedges.

18 fresh green king prawns
100 ml extra virgin olive oil
2 red chilies, finely diced
2 lemons, zested
2 cloves garlic, crushed
lime wedge, to serve

GARLIC PRAWNS

This is a great easy prawn marinade, they are great on the BBQ, we put them out as appetizers but they can also be a main course. I've also sauteed them with the marinade and used the sauce with pasta or just lapped it up with French bread! ENJOY.

Steps:

  • In a glass dish, mix together the olive oil, mustard, garlic, lemon juice, orange juice, basil and white wine. Add the prawns, and stir to coat. Cover, and let marinate for 1 hour.
  • Heat an outdoor grill to high heat.
  • Thread prawns onto skewers. Grill for 3 to 5 minutes, turning once, until pink.
  • If desired, reserve marinade; transfer to a saucepan and bring to a boil. Reduce heat and simmer for 5 minutes. Serve with prawns.

  • With a sharp knife, score down the back of the shrimp. Remove the thin, digestive tract with the tip of the knife. Repeat with the rest of the prawns. Rinse the prawns under running water and pat dry with paper towels.
