  • Preheat oven to 350°. Cut squash in half lengthwise; remove and discard seeds. Cut each half crosswise into 1/2-in. slices; discard ends. Arrange squash in a shallow baking pan; cover with foil. Bake until just tender, 25-30 minutes. , Combine sugar and butter; spread over squash. Bake, uncovered, 15-20 minutes longer, basting occasionally.

  • Preheat oven to 350 degrees F (175 degrees C).
  • Turn acorn squash upside down onto a cookie sheet. Bake in a 350 degrees F (175 degrees C) oven until it begins to soften, approximately 30 to 45 minutes.
  • Remove squash from the oven and turn onto a plate so that the flesh is facing upwards. Place butter and brown sugar into the squash, and place remaining squash over the other piece. Place squash in a baking dish (so the squash won't slide around too much) while baking.
  • Place squash in the 350 degrees F (175 degrees C) oven and bake another 30 minutes.

  • Cut the acorn squash in half vertically. Scrape out and discard the seeds. Slice each squash half horizontally into 1-inch half moons. Transfer the slices to a large bowl, and season with salt and pepper. Sprinkle with the Aleppo pepper, if using.
  • In a small saucepan, melt the butter over medium heat. Keep cooking, swirling the pan often, until the milk solids are golden brown and the butter smells irresistibly nutty. Immediately add the white wine vinegar. Remove the pan from the heat and swirl in the maple syrup.
  • Drizzle 2 tablespoons of the browned butter sauce over the squash (reserve the rest of the sauce in the skillet for later). Toss to coat. Arrange the squash in an even layer on the prepared baking sheet. Bake until the squash is caramelized and tender (a knife should slide through without resistance), about 30 minutes, flipping the slices halfway through.
