Sweet Potatoes and Apples Au Gratin image

Steps:

  • Place apples in a large bowl; sprinkle with lemon juice. Add the sweet potatoes, syrup, butter, salt and pepper; toss to coat. , Transfer to a 3-qt. baking dish coated with cooking spray. Bake, uncovered, at 400° for 35-40 minutes or until apples are tender, stirring once. , In a small bowl, combine the bread crumbs, oil, cinnamon, nutmeg and vinegar; sprinkle over potato mixture. Bake 10-15 minutes longer or until topping is golden brown.

3 cups thinly sliced tart apples (about 3 large)
1 teaspoon lemon juice
3 pounds sweet potatoes (about 5 medium), peeled and thinly sliced
1/4 cup maple syrup
1 tablespoon butter, melted

2 teaspoons olive oil
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon cider vinegar

Apple, Potato, and Onion Gratin image

Steps:

  • Preheat oven to 400°F. Butter 13x9x2-inch glass or ceramic baking dish. Melt 6 tablespoons butter in large nonstick skillet over medium heat. Add onions, thyme, and 2 teaspoons salt; sauté until onions are translucent, about 10 minutes. Increase heat to medium-high; sauté until onions are tender and begin to color, about 8 minutes longer. Remove from heat. Add remaining 6 tablespoons butter, 2/3 cup water, wine, and sugar to skillet; stir and swirl skillet to combine. Bring to boil. Cool onion mixture to lukewarm.
  • Combine potatoes, apples, remaining 2 teaspoons salt, and onion mixture in large bowl; toss gently to blend. Transfer to prepared baking dish, spreading evenly. Cover dish with parchment paper, then cover with foil, shiny side down. Bake gratin until potatoes are tender, about 55 minutes. Uncover and bake until top browns and juices bubble thickly, about 20 minutes longer. (Can be made 6 hours ahead. Let stand uncovered at room temperature. Rewarm, loosely covered with foil, in 300°F oven for 20 minutes.) Let gratin stand 15 minutes before serving.

  • This gratin is unusual for having no cream or cheese - letting the lovely seasonal flavors of the produce shine through.

12 tablespoons (1 1/2 sticks) butter, divided

4 teaspoons fine sea salt, divided
2/3 cup water
2/3 cup dry white wine
4 teaspoons sugar
2 1/2 pounds Yukon Gold, yellow Finn, or German Butterball potatoes, peeled, cut into 1/4-inch-thick rounds
2 pounds tart apples (such as Granny Smith, Pippin, or Pink Lady), peeled, halved, cored, cut into 1/4-inch-thick slices

BUTTERNUT SQUASH, APPLE, ONION AU GRATIN

Great fall dish! Our family uses it as a Thanksgiving side. Can be made vegetarian by leaving out bacon and substituting vegetable stock for chicken stock.

Butternut Squash, Apple, Onion Au Gratin image

Steps:

  • Preheat oven to 350. Spray 9- x 11-inch glass baking pan with cooking spray.
  • Place flour, salt, and cinnamon into a large plastic bag. Add squash, apples, and onions; shake until lightly dusted.
  • In glass dish, layer 1/2 of squash, apples, and sweet onion. Pour 1/2 cup chicken stock over the top, then sprinkle 1/2 of cheese. Layer with remaining squash, apple, and onions. Pour remaining chicken stock over the top, and cover with foil.
  • Bake in preheated oven for 40 minutes.
  • Take out and sprinkle with bacon crumbles and remaining cheese. Return, uncovered, to oven; bake for another 5 minutes. Let sit for 5 minutes before serving.

Potato and Apple Gratin image

Steps:

  • Preheat oven to 400 degrees and lightly oil a 9 by 9-inch glass or ceramic casserole dish. Shingle one layer of potatoes to cover the bottom of the casserole dish. Sprinkle over with some of the sliced onions, then layer with some of the sliced apples. Season with salt and pepper. Repeat the layering process until the entire product is used, making sure you finish with a layer of potatoes. When using a microwave, be sure to wrap the casserole in plastic and poke 2 holes in the plastic. Cook at high heat for 15 minutes. Remove the plastic and transfer to the preheated oven. Cook until well browned, approximately 10 minutes. Sprinkle with the grated cheese and bake until melted and lightly browned.
  • When using the oven, cover the casserole or wrap with aluminum foil bake 45 to 50 minutes. Remove the foil and bake until well browned. Sprinkle with the grated cheese and bake until melted and lightly browned.

  • Preheat oven to 400°F. Butter and flour 15x10x2-inch baking dish. Spread 1/3 of potato slices over bottom of dish. Arrange 1/2 of onion slices, then 1/2 of apple slices over. Sprinkle with 1 tablespoon lime juice, 1 tablespoon sugar, and 1/3 cup cream. Dot with 1 tablespoon butter. Sprinkle with salt and pepper. Repeat layering. Arrange remaining potato slices on top. Drizzle with remaining 1/3 cup cream. Dot potatoes with remaining 1 tablespoon butter. Sprinkle with salt and pepper.
  • Cover dish with foil. Bake until potatoes and apples are tender, about 45 minutes. Increase oven temperature to 500°F. Remove foil. Bake until potatoes are golden brown, about 10 minutes.

Steps:

  • In a large bowl, combine flour and sugar. Drain pineapple, reserving 1-1/2 cups juice. Add juice to flour mixture and mix well. Stir in the pineapple and cheese. Pour into a greased 13x9-in. baking pan. , Cover and bake at 350° for 30 minutes. Uncover and stir; bake 10 minutes longer. Combine melted butter and cracker crumbs; sprinkle over pineapple mixture. Return to the oven for 10-15 minutes or until a knife inserted in the center comes out clean.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Combine brown sugar, flour, cinnamon, nutmeg, and cloves together in a large bowl; add apples and toss to coat. Stir raisins, walnuts, and butter into apple mixture.
