AUNT AMY'S SWEET TRASH

Aunt Amy was a great cook! Unfortunately this is the only recipe I got from her.

Aunt Amy's Sweet Trash image

Steps:

  • 1. Bring syrup of brown sugar, dark karo, butter and salt to a boil, stirring till it boils. Then boil for 5 min.
  • 2. Pour over cereal in large bowl and mix well until coated. Pour onto buttered sheet pans.
  • 3. Bake at 250 degrees for 1 hour, stirring every 15 min. Spread on wax paper to cool. Put in large container w/lid when cooled.

8 c cereal, corn chex, rice chex, cheerios
peanuts and/ or pecans
1/2 c brown sugar
1/2 c dark karo
1/4 c butter
1/2 tsp salt

Steps:

  • In a large bowl, cut the tip off cob. Cut the kernels from cob with a small paring knife. Using the back of the blade, scrape against the cob to press out the milky liquid.
  • Whisk together sugar, flour, and salt and pepper, to taste. Combine with corn. Add the heavy cream and water. Mix.
  • In a large skillet over medium heat, heat bacon grease. Add corn mixture and turn heat down to medium-low, stirring until it becomes creamy, about 30 minutes.
  • Add the butter right before serving.

8 ears corn, husked
2 tablespoons sugar
1 tablespoons all-purpose flour
Salt and freshly ground black pepper
1 cup heavy cream
1/2 cup cold water
2 tablespoons bacon grease
1 tablespoons butter

AMY'S CORN SALSA

Inspired by Dahn Bull's mom, Leslie. Dahn and I were on our way home from a pandemic drive-by car parade for Jim Tedisco's birthday and he called his parents. Leslie told us about the delicious corn salad she had just made. I couldn't stop thinking about it and had to make my own. This is my take as I don't like a lot of dressing and I love raw corn.

Steps:

  • Combine corn, cherry tomatoes, avocado, bell pepper, jalapeno, red onion, cilantro, salt, and pepper in a large mixing bowl. Squeeze lime over top and toss to combine. Serve immediately.

Steps:

  • Beat together cream cheese and margarine until well blended. Add flour, mixing well. Shape into a ball, cover and chill for 2 hours.
  • In saucepan over medium heat, cook sugar and milk, stirring occasionally until milk boils and sugar is dissolved. Add the ground nuts. Remove from heat and let cool until mixture is of spreading consistency.
  • Roll out chilled dough on lightly floured surface to a rectangle about 18 X 12 inches. Cut in half lengthwise. Spread each piece with milk/nut filling and roll up like a jelly-roll, starting from the long side.
  • Cut each roll in half. Place seam side down on ungreased cookie sheets (two on a baking sheet). Leaving roll's shape intact, cut into slices 1/2 inch thick almost to the bottom of the roll.
  • Bake at 350 degrees F (175 degrees C) for 15 to 20 minutes or till done. Remove from sheet and sprinkle with confectioners' sugar. Cool on racks. Cut cookies all the way through. Refrigerate or freeze. Re-sprinkle with confectioners' sugar before serving.
  • Variations: A) In place of milk/sugar/nut filling, spread with ground filberts and red raspberry preserves. B) Before rolling, sprinkle chopped chocolate chips over milk/sugar/nuts filling.

Steps:

  • In a large bowl mix together the corn meal, flour, salt, and baking powder.
  • In a separate bowl mix together the eggs, butter, and buttermilk. Add to the dry ingredients and stir until well blended.
  • Heat a dry 12 inch cast iron skillet over high heat for 2 minutes. Add corn oil to skillet, swirl oil around to coat bottom and sides. Leave remaining oil in pan. Return to high heat for 1 minute.
  • Pour the cornbread batter into the skillet and cook on high heat until bubbles start to form in the center. Remove from stove.
  • Bake in a preheated 400 degree F (200 degree C) oven for 40 to 50 minutes, or until a knife inserted into the center comes out clean. Serve warm.

Steps:

  • Melt the butter in your pan, in the oven. I do this so I don't have to spray my pan with any chemicals. When it's melted, swish it around your pan to coat it, then dump the rest of it into a bowl for step #2.
  • Combine all ingredients (including the melted butter) and bake in a greased 8x8 pan at 350 degrees for 50-60 minutes. Should be golden brown. Doubles well, for a 9 x 13 pan.
