AVOCADO CREAM SAUCE
I like this avocado cream sauce over really smoky grilled chicken and some pasta... It's a really basic easy sauce you can play with based on your own preferences.

Steps:
- Combine avocados, garlic, lime juice, green onions, cilantro, and tarragon in a food processor; puree until smooth.
- Melt butter in a saucepan over low heat. Stir in avocado puree and cook over low heat, stirring occasionally, until heated through, about 5 minutes. Add cream and cook until heated through, but not boiling. Season with salt.

GREEN SAUCE WITH AVOCADO

Steps:
- In a food processor or with mortar and pestle, process or pound the garlic and salt to a paste. Add onion, chilies and tomatillos; pulse in processor, or pound to make a slightly chunky paste.
- Scoop out the avocado flesh. For a smooth, machine-finished purée, add it and the cilantro to the processor, and process very fine. To do it by hand, finely chop the avocado, and mash it into the onion-tomatillo mixture; stir in cilantro leaves. (For a medium texture, pour the machine-processed onion-tomatillo mixture into a bowl, and mix in the chopped avocado and cilantro.)
- Serve immediately as a dip or a sauce with chips or vegetables.

AVOCADO SAUCE
This sauce is often served at taquerias. It is a thin sauce and served with burritos, tacos etc.The first time I had it I loaded my tacos with it thinking it was like Anerican style guacamole. It was so hot, I had to throw my tacos away and order more. Now I know to use caution with this. Leave the seeds in the jalapeno, or take them out depending on your desired level of heat. Since you never know how hot a jalapeno is until you take a bite, please start off with just a little jalapeno and add more to suit your taste.And if you are really brave you can add more than one!

- Place lime or lemon juice, olive oil, avocados, garlic, jalapeno, cilantro, 3/4 teaspoon salt, and black pepper into the bowl of a food processor. Process 4-5 minutes or until creamy. Scrape down the bowl with a spatula a few times during the process.
- If you want a more liquidy avocado dressing add in almond milk in one tablespoon increments until it reaches to the consistency you desire.
- Place in a jar, place a piece of stretch film on top of the surface of the dressing to keep it from browning, and close it tightly with a lid. As long as it is kept in the fridge, this dressing will be good for 4-5 days.
