Steps:

  • Lightly grease cookie sheets. Insert craft sticks into whole, stemmed apples.
  • In a medium saucepan over medium-high heat, combine sugar, corn syrup and water. Heat to 300 to 310 degrees F (149 to 154 degrees C), or until a small amount of syrup dropped into cold water forms hard, brittle threads. Remove from heat and stir in food coloring.
  • Holding apple by its stick, dip in syrup and remove and turn to coat evenly. Place on prepared sheets to harden.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Scoop out the core from top of the apple, leaving a well. Do not cut all the way through. Stuff each apple with 2 tablespoons brown sugar and 1 tablespoon butter. Place in a shallow baking dish and sprinkle with cinnamon.
  • Bake in preheated oven for 15 minutes, until sugar begins to caramelize and apples are tender.

Baked Apples with Candied Walnuts image

Steps:

  • Put oven rack in middle position and preheat oven to 450°F. Oil a baking sheet.
  • Halve apples lengthwise and remove core with a melon-ball cutter or a paring knife. Melt butter in a 10-inch heavy ovenproof skillet over moderate heat and sprinkle with 1/2 tablespoon sugar. Arrange apple halves, cut sides down, on sugar and cook, undisturbed, until sugar begins to caramelize, 3 to 5 minutes. Transfer skillet to oven and bake apples until tender, about 15 minutes.
  • While apples are baking, cook remaining 1/4 cup sugar with salt in a dry 7- to 8-inch heavy skillet over moderately high heat, undisturbed, until sugar begins to melt, about 2 minutes. Continue to cook, stirring occasionally with a fork, until sugar is melted into a deep golden caramel, 1 to 2 minutes more. Remove from heat. Add walnuts, stirring to coat, then pour onto baking sheet and cool 10 minutes. Break nuts into small pieces if necessary.
  • Stir together yogurt and 2 teaspoons honey.
  • Serve apples, cut sides up, topped with yogurt and nuts. Drizzle with additional honey if desired.

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 inch square pan.
  • Remove and reserve tops of apples. Core the apples, leaving approximately 1/2 inch at the bottom. Arrange in the baking dish.
  • In a small bowl, mix together brown sugar, cinnamon red hot candies and cinnamon. Fill each apple with the mixture. Replace apple tops. Sprinkle remaining mixture over the apples.

These are the kind you found at the circus or carnival! Not the newer version covered with cramel. ;) Candy thermometer is needed for this, as well as popsicle sticks. The number of apples needed depends on the size of the apples, probably 4 medium ones. The recipe states that each batch candies approximately 1 dozen medium apples. I'm not sure I trust that.   • Mix 1st 3 ingredients in saucepan.
  • Put on high heat with candy thermometer positioned in center of fluid level.
  • While it is boiling, thoroughly wash and dry your apples, and spear with the sticks.
  • Boil mixture until reaches hard crack (300ºF), then immediately add red food coloring and stir.
  • Quickly immediately dip the apples, twisting to cover, and set on a greased cookie sheet.

In a large saucepan over medium heat, bring the water, sugar and candies to a boil, stirring constantly until sugar and candies are dissolved. Reduce heat; carefully add apples.   • With the rack in the middle position, preheat the oven to 200°C (400°F).
  • In a bowl, combine all the ingredients except the apples. Set aside.
  • Slice a thin layer off the top of each apple. Using a melon baller, dig out the core, leaving the bottom intact. Make a horizontal cut through the peel around each apple so the fruit doesn't burst when baking.
  • Place the apples on a 33 x 23-cm (13 x 9-inch) baking dish. Divide the oat mixture among the apples, spooning it into the hollows and mounding it on the tops. Cover the dish with aluminum foil. Bake 30 minutes. Remove the foil and continue baking until the oat mixture is lightly browned, 5 to 10 minutes.
  • Cool to room temperature. Serve as is or with vanilla ice cream.
