Steps:
- Coat a 9x13-inch baking dish with melted butter. Spread any remaining melted butter over bottom of dish.
- Sprinkle brown sugar and cinnamon evenly over melted butter.
- Arrange bread in two layers over brown sugar mixture.
- Beat eggs, milk, and salt in a bowl; pour over bread.
- Cover and refrigerate overnight.
- Preheat oven to 350 degrees F (175 degrees C).
- Bake in the preheated oven until golden brown, about 30 minutes.

CARDAMOM FRENCH TOAST CASSEROLE
I love cardamom, and I thought I'd play with recipes featuring it. I came up with this one after having made cardamom braids, a Norwegian sweet bread. Cardamom braids are the best for this, but French bread or Italian bread will work, too.

- Preheat an oven to 350 degrees F (175 degrees C). Prepare a 9x12-inch baking dish with cooking spray.
- Place the bread cubes in the prepared dish. Sprinkle the pecans over the bread.
- Beat the eggs, 1 1/2 cup milk, almond extract, 1 tablespoon cardamom, cinnamon, and brown sugar together in a bowl until thoroughly combined; pour the mixture evenly over the bread cubes and pecans. Cover the dish with aluminum foil and allow the casserole to sit 15 minutes to allow the flavors to combine.
- Bake in the preheated oven for 20 minutes; remove the aluminum foil and continue baking until the top is golden brown, another 20 to 25 minutes. Remove from oven and allow to cool slightly, about 10 minutes.
- Mix the confectioners' sugar, 1/2 teaspoon cardamom, and 3 tablespoons milk in a bowl with a fork until smooth; pour over the slightly cooled casserole to serve.

- Spread cream cheese over six slices of bread; top with marmalade and remaining bread. In a shallow bowl, whisk eggs and milk., Lightly grease a griddle; heat over medium heat. Dip both sides of sandwiches into egg mixture. Place sandwiches on griddle; toast 2-3 minutes on each side or until golden brown. If desired, serve with syrup.

MARMALADE BAKED FRENCH TOAST
A quickly-thrown-together recipe to use up some challah before it went stale. It's not very sweet, because I like it that way. If you like it sweeter, you could add more marmalade or some sugar to the custard base, or serve it with maple syrup. I used Smucker's Low-Sugar Orange Marmalade to keep the carb count down a little bit.

- Beat eggs. Whisk in cream, milk and marmalade. Pour over bread cubes. Let stand 1 hour.

MARMALADE-STUFFED FRENCH TOAST WITH CARDAMOM

- Slice the bread into ½ inch pieces. Spread half with softened cream cheese. Lay the slices, cheese-side up, in a jelly roll pan. Spread the other half with the marmalade, and place thesemarmalade-side down, to form sandwiches. In a large bowl, combine the eggs, milk, heavy cream, vanilla, sugar, cardamom and zests. Whisk until well blended, then pour over the bread. After 5-15 minutes, carefully turn each sandwich. Dust with nutmeg, cover and refrigerate overnight. Preheat the oven to 350°. Bake French toast until puffed and golden brown, about 50 minutes. Sprinkle with powdered sugar; serve with warm maple, citrus, or berry syrup.
BAKED FRENCH TOAST
I got this recipe from my sister in law. She and my brother had it at their gift opening after the wedding. I make it any time we have people staying with us, and it is always a hit. You may sprinkle the top with pecans if you wish.

- Preheat oven to 300°F. Place baking sheet in oven. Cutting through top crust of each bread slice, make 4-inch-long by 2-inch-deep pocket. Stir cream cheese and marmalade in small bowl. Spoon 1 generous tablespoonful cream cheese mixture into each bread pocket.
- Whisk eggs, milk, vanilla extract, cinnamon and nutmeg in pie plate.
- Dip 4 stuffed bread slices into egg mixture, coating completely. Melt 1 tablespoon butter in large nonstick skillet over medium heat. Add dipped bread to skillet. - Preheat oven to 325°F with racks in middle and lower third positions. Place milk and peppercorns in a large saucepan; bring milk just to a boil over medium-high. Remove from heat; let steep 30 minutes. Pour through a fine-mesh strainer into a bowl; discard solids.
- Whisk together eggs, egg yolks, salt, 1/2 cup of the granulated sugar, and 1/4 teaspoon of the cardamom in a separate large bowl until smooth. Slowly pour strained milk into egg mixture, whisking constantly until combined. Set aside until ready to use.
- Stir together softened butter and remaining 2 tablespoons granulated sugar and 1/2 teaspoon cardamom in a small bowl until combined. Spread mixture evenly over both sides of bread slices (it’s OK if bread isn’t completely covered in butter). Arrange bread slices evenly on 2 rimmed baking sheets. Bake in preheated oven until bread is dry to the touch and golden brown, about 20 minutes, flipping bread slices and rotating baking sheets between top and bottom racks halfway through cook time. - Cut toasted bread slices in half. Grease a 13-x 9-inch broiler-safe baking dish with softened butter. Arrange bread slices, slightly overlapping, in prepared baking dish. Pour egg-milk mixture over bread; press bread into liquid until completely moistened. Cover and chill at least 8 hours (or up to 12 hours).
