Steps:

  • Heat oven to 375 degrees F.
  • Cook pasta in large saucepan as directed on package, omitting salt and adding spinach to the boiling water for the last minute.
  • Meanwhile, cook and stir chicken and basil in large nonstick skillet sprayed with cooking spray on medium-high heat 3 min. Stir in tomatoes and spaghetti sauce; bring to boil. Simmer on low heat 3 min. or until chicken is done, stirring occasionally. Stir in Neufchatel.
  • Drain pasta mixture; return to pan. Stir in chicken mixture and 1/2 cup mozzarella; pour into 2-qt. casserole sprayed with cooking spray.
  • Bake 20 min. or until heated through; top with remaining cheeses. Bake 3 min. or until mozzarella is melted.

I found this in a Barilla Pasta cookbook. It is excellent. The original recipe calls for roasted chicken but cooked is as good. It also calls for fresh broccoli and I substituted frozen.

BAKED PENNE WITH CHICKEN, BROCCOLI AND THREE CHEESES image

Steps:

  • 1. Melt the butter in a saucepan; stir in the flour until well blended. Gradually stir in the milk and broth and cook, stirring constantly, over low heat until mixture is smooth and comes to a boil, about 8 minutes. Stir in 1 cup of the mozzarella and 1/4 cup of the Parmesan; remove from heat. Cook the pasta according to package directions for al dente or about 10 minutes. Add the broccoli and cook about 2 minutes more. Drain well and rinse with a little cold water to stop the cooking. Preheat the oven to 350° F. Combine the pasta, broccoli, cheese sauce and chicken; spread in a shallow 2-quart baking dish. Drop pieces of blue cheese on top and tuck into the pasta with your fingers. Sprinkle the surface with the remaining mozzarella and Parmesan. Bake until top is golden and mixture is bubbly, about 25 minutes. Cool for 10 minutes before serving. Leftovers reheat well in the microwave.

This is another of my family's all time favorite dishes! This recipe calls for an 11 x 7-inch pan, which will feed 3 people easily, I strongly suggest to double up the ingredients and bake it in a 13 x 9-inch baking pan if you are feeding more than 4 people, everyone will want seconds! I have also added in ground turkey that I cook with the garlic before I saute the broccoli, you might have to bake it in a larger baking dish if you are adding in ground turkey. to the mixture also.

Three Cheese Broccoli and Penne Bake image

Steps:

  • Set oven to 400 degrees.
  • Grease an 11 x 7-inch baking dish.
  • In a medium skillet heat oil, then add in garlic; saute for 1 minute, then add in the broccoli florets; saute for a couple of minutes, then remove to a bowl.
  • Cook the penne in a large pot of boiling salted water until JUST firm tender; drain.
  • In a large bowl, mix together marinara sauce, 1 cup mozzeralla cheese, 3/4 cup ricotta, fresh basil and 3 tablespoons Parmesan cheese; mix well to combine.
  • Add in the cooked penne and the broccoli/garlic mixture; toss to combine, then season with salt and pepper.
  • Transfer the mixture to prepared baking dish.
  • Spoon and then spread with 1-1/4 cups ricotta cheese (you do not have to cover completely with ricotta).
  • Sprinkle with about 1 cup (or more) mozzeralla cheese, then sprinkle with about 1/3 cup Parmesan cheese over the mozza cheese.
  • Bake for about 20 minutes uncovered or until the cheese melts.
  • Let stand for about 5-8 minutes before serving.

Steps:

  • In a small bowl, combine the bread crumbs and butter and set aside. Lightly grease a 9X13-inch baking dish and set aside. Preheat the oven to 400°F and make sure the oven rack is placed in the middle of the oven. In a large pot, bring the water for the pasta to a boil. Stir in one tablespoon salt and the broccoli. The broccoli cooks quickly so stay close! Cook the broccoli for 1 minute, until it is bright green. Quickly remove the broccoli with a slotted spoon to a plate. Return the water to a boil and add the pasta and cook until al dente, about 1 to 2 minutes less than how you would eat it normally (it will cook a bit more in the oven while baking). Drain the pasta in a colander and toss with 1 tablespoon olive oil. Leave it in the colander and set it aside. Wipe the pot dry. Add the remaining 1 tablespoon oil and return to medium heat until shimmering. Add the onion and cook until softened and beginning to brown, about 5 minutes. Stir in the garlic and thyme; cook until fragrant, about 30 seconds, stirring constantly. Add the flour, salt and pepper, and cook, stirring constantly, until golden, about 1 minute. Slowly whisk in the broth and cream; bring to a simmer, whisking often. Add the chicken and cook, stirring occasionally, until cooked through, about 6 to 7 minutes. Stir in the sun-dried tomatoes and smoked mozzarella. Add the cooked pasta and broccoli to the sauce; stir to combine.
