SPINACH BEEF MACARONI BAKE
This hearty casserole is great for a family reunion or church supper. I've also made half the recipe for family gatherings. It's become a special favorite of my grandson-in-law and great-grandson, who often ask me to serve it when they're visiting. -Lois Lauppe, Lahoma, Oklahoma

Steps:
- Cook macaroni according to package directions. Meanwhile, in a large Dutch oven, cook the beef, onions, carrots and celery over medium heat until meat is no longer pink; drain. Add the tomatoes, salt, garlic powder, pepper and oregano. Bring to a boil. Reduce heat; cover and simmer for 30 minutes or until vegetables are tender. , Drain macaroni; add macaroni and spinach to beef mixture. Pour into two greased 3-qt. baking dishes. Sprinkle with cheese. Bake, uncovered, at 350° for 25-30 minutes or until heated through.

This is a great ground beef casserole. Even my husband who doesn't care for spinach likes this one! And it got rave reviews when I took it to a church potluck.

- Preheat the oven to 350 degrees F (175 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir ground beef, onion, and garlic in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease. Add mushrooms, oregano, hot sauce, salt, and pepper. Simmer for 5 minutes. Add spinach, soup, and sour cream; cook until heated through, about 5 minutes.
- Transfer to a casserole dish and cover with mozzarella cheese.
- Bake in the preheated oven until cheese is melted, 15 to 20 minutes.

- In a 10-in. cast-iron or other ovenproof skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add the spinach, mushrooms, garlic salt and basil. Cover and cook for 5 minutes. , In a saucepan, melt butter over medium heat. Stir in the flour and salt until smooth. Gradually add milk. Bring to a boil; cook and stir until thickened, about 2 minutes. Stir in cheese. Pour over meat mixture; mix well. Reduce heat; cook, covered, until heated through. If desired, serve with biscuits.

Finally, a way to get even your pickiest eaters to eat their spinach! This is a filling and quick casserole that can easily be made low fat if you use ground turkey and low-fat cheese. Serve with a green salad and some french bread and dinner is served!

- In a large wok or frying pan heat oil and cook onion and garlic in a small amount of oil until transparent.
- Add spinach and cook until wilted. Set aside.
- Brown ground beef and season with garlic salt, salt and pepper to taste. Set aside.
- Combine cooked pasta, spinach, ground beef, cheese (amount to your preference, my family likes it cheesy!) and soup.
- Add salt and pepper to taste.
- Place in a large baking dish, cover in a layer of shredded cheese.
- Cover with tin foil and place in a 350°F oven for 30 minutes.
- Uncover and place back in oven for another 10 minutes.

- Remove excess water from spinach and chop.
- Heat oil in large pan.
- Add onion and cook until soft, stirring often.
- Add ground beef and cook until well browned, stirring often.
- Add mushrooms,cook for approximately 5 minutes, stirring often.
- Remove from heat, drain all fat from pan.
- Add spinach, sour cream, oregano, thyme, and half of each cheese. Stirring well after each addition.

- Preheat oven to 190c.
- Place the beef, bacon, onion and garlic in a fry pan and cook gently until meat has changed colour and onion is softened.
- Add in the wine, tomatoes and their juice, basil, chili flakes, mixed spice and brown sugar. Bring to the boil, then reduce to a simmer and cook about 20 minutes. SAdd the spinach cook a couple of minute more, season with sall and pepper then add the cooked pasta.
- Spray a 6 cup oven proof dish and spoon in the pasta mix.
- Lightly beat the eggs, add in the milk and season with salt and pepper.
- Pour over the pasta mix then sprinkle with the grated parmesan.
- Bake in the oven for 20 minutes or untl set and golden brown.
